I think most people would agree that there is nothing better than spending a summer night with friends and family while sharing stories, laughs and great fresh food. And an absolutely stunning view of Lake Waquaquet didn’t hurt either. (How fun is it to say Waquaquet?!)
One of my favorite parts of summer is the abundance of fresh fruit and veggies. Yes, I think I have the only mother in the world who tells her child to stop eating so much fruit and leave some for everyone else. So what better way to celebrate the start of summer than a lake side barbeque finished off with a Peach and Blueberry Cobbler?
Peach and Blueberry Cobbler
1 pint of blueberries
½ cup Oats
½ cup flour
¼ cup brown sugar
½ cup butter (I used Smart Balance)
Sprinkling of Cinnamon
1.) Preheat oven to 350o
2.) Wash and cut peaches into wedges. Place the fruit in a 9 X 13 glass baking dish. Make sure you don’t make the slices too big or they will take forever to cook. You can peel off the skin if you’d like. I prefer to keep them on for some added nutrients.
3.) Wash blueberries and remove any stems. Disperse berries over the peaches.
4.) Sprinkle cinnamon over the fruit.
5.) Put oats, flour, brown sugar and butter in a medium bowl. Cut in the butter with a fork and knife until the butter is equally distributed throughout the mixture. It is ok for it to be chunky, but you do not want lumps of butter.

6.) Sprinkle the topping over the fruit.
7.) Put in the oven at 350o until the fruit is bubbly and the topping is brown. Depending on your oven, it should take about 40 – 50 minutes. Monitor how quickly the topping is browning. You want to make sure it does not brown too quickly so the fruit has time to cook.
The Peach and Blueberry Cobbler can be served warm, at room temperature or cold. (I prefer it warm with a side of vanilla ice cream!)
