Too Much Thinking Time

On the way out the door, I headed to the kitchen to throw something together really quickly for lunch. I had bought some pears earlier this week and they are starting to get to the point or “Eat me or else.” So lunch was made around these pears.

I grabbed a large handful of spinach, chopped up a green pepper, and the pear and put it all in a To-Go box. Sprinkled some sunflower seeds and feta cheese on top. Grabbed my salad dressing container and called it lunch! It was actually really satisfying and the flavors went together really nicely.

 

As soon as I got to the office, there wasn’t a moment for me to sit and relax at all.

Oh my way home, I started to think about everything that had to get done before I headed out for the weekend. Between the dogs, cleaning, packing, work, my 11 mile run and a long list of little things, I’m not exactly sure how it’s going to be managed. The long ride really just gives me time to start freaking out about what I’m not doing while I’m driving. It’s slightly miserable.

I ended up stopping off at the post office to drop the Thanksgiving letters in the mail. As I was addressing them this afternoon, I was realizing how many different places these letters were actually going. It was NUTS. So out of the 10 letters that I sent out, I reached 7 different states. Not kidding.

Crazy right?! It just made me think about how spread out we have all gotten and yet I still talk to them on a regular basis. 🙂

Needless to say, as soon as I got home, I was starving and prepared to make nothing that took longer than 5 minutes. I just didn’t have the time. I had picked up some Cranberry English Muffins that I have been dying to try. So one of those went into the toaster while I mixed up the insides.

1 Can of Tuna 1/4 Green Pepper, Chopped
1/4 Teaspoon Onion Powder 1 Tablespoon Yellow Mustard
A Dab of Smart Balance Mayo

I topped it with a slice of american cheese and Dinner was served!

 

 

It was PACKED with green peppers and I loved it. The pop of cranberry from the english muffin added a lot of flavor to it. I would plan on putting some dried cranberries into the next batch of tuna that I make. It really added something different to it.

Tonight I’ve got a lot on the agenda, so I’m off to crackin!

 

Does driving give you a time to relax?? Or does it make you think about everything you haven’t done resulting in a mini freak out??

Where’d You Go, Bernadette??

Last Night I relaxed on the couch and finished up a book that I had been reading for a while now. Where’d You Go, Bernadette by Maria Semple.

 

I had picked it up because I was perusing in Barnes N Noble a little while ago and I came across this one on the Staff Picks Shelf. I usually end up walking out with one of the Staff Picks in hand because it takes this overwhelming store of possibilities and narrows it down to 20 good reads. Simple and easy. 🙂

Where’d You Go, Bernadette is a story about the husband of a Microsoft Guru and the mother of Bee, a smart, spunky teenager attending one of the most prestigious private schools in Seattle. Bernadette is misunderstood amongst her neighbors and suddenly goes missing. Bee complies letters, emails and notes between the members of her community in order to track down her mother.

The format of the book, is the compilation of letters that Bee has organized. Although, I didn’t find that to be apparent until 3/4 of the way through the book. The family dynamic and the character development is definitely a bit different as well. Bernadette herself comes off as a frivolous person that just acts upon a whim. She’s very unaware of her surroundings and can either act just to make the people around her happy, OR purposefully act against those people. You then dig more into her past and begin to understand more about what drives her.

It’s definitely an interesting read, but I didn’t find it to be a page turner. It’s light and short. A good read for just before bedtime.

Breakfast:

This morning I got up, wrote out some of the Thanksgiving cards that I had made this weekend and whipped up a quick breakfast. I was already feeling stuffed for some CRAZY reason, so I just started throwing veggies on the skillet and topped it with 3 eggs to hold it all together.

In the egg scramble was some onions, green peppers and spinach leaves. I sprinkled some cheddar cheese on top, along with salt and pepper. Not such a bad start to the day. It’s light and easy but packed with enough protein that it should get me through lunch.

How do you go about selecting your books?? Friends recommendations?? Google?? Barnes N Noble??

Slow Cooked Buffalo Chicken Flatbread

This morning, I woke up at 6 to try out the Jillian Michaels Yoga DVD Workout. Today was supposed to be my rest day after the 7 mile run yesterday. Instead, I wanted to give her DVD a try because it was low impact and yoga does great things for healing muscles. I have also heard GREAT things about her DVD workouts and really wanted to give one of them a go.

I actually really liked it! She has a different take on yoga in the sense that she doesn’t focus on the static movements that many others do. I find yoga to be slightly boring, but Jillian incorporates deliberate movements that target just about every muscle in the body. FOr an early morning workout, it’s perfect. All you have to do is roll out of bed and flip on the TV. Not much to it. And she will DEFINITELY make you sweat.

After the workout, I sat down at the computer for some work. whipped up some breakfast and headed out on the road. For breakfast I indulged in a LOVELY Spinach Protein Smoothie. OH GOOD YUM.

 

Ingredients:

1 Frozen Banana 1 Handful of Spinach Leaves
1/2 Cup Frozen Blueberries 1/2 Cup Almond Milk
2 Full Tablespoons Chocolate Protein Powder

It may not look all the pretty, but it was good. I have been dying to give the spinach deal a try just to see how it went and I really enjoyed it! You will definitely be seeing a few more smoothies with spinach leaves in there!

Work was crazy. I just ran around all day. I also had to deal with some shenanigans trying to find the pups a place to stay on saturday night because Brent and I are going camping with some friends. That was a headache. I got a new dishwasher! Fun! But it’s legit been washing the first load for the past two hours…annnnnnd it’s still going. Mer.

For dinner, I delved into that Slow Cooked Buffalo Chicken and made a little flatbread! Oh and did I do good things! LOVE! It had some spice, and some zest and some SIZZLE! Yup, I said it!

 

Ingredients:

1/4 Cup Slow Cooked Buffalo Chicken 1 Tablespoon Jalapenos
1/4 Slice Muenster Cheese, Shredded 1/4 Cup Mozzarella Cheese, Shredded
Buffalo Saice to Taste 1/4 Cup Onion, Sautéed

Directions:

1. Sautee your onions. Place all of your toppings on your flatbread and bake at 375 for 5-10 minutes depending on how crispy you want it. Enjoy!!

 

 

 

 

 

This was actually very low calorie as well! The bread I used was only 60 calories, and with all of the toppings, we are talking about 200 calories! AWESOME. Now, you obviously need more than that to fill the tank, so pair it with a salad, or in my case…Moose Track Ice Cream!

 

I mean really?! What doesn’t complement something spicy better than something sweet?! Hahaha.

Oh well! I’ve got Tina’s Best Body Bootcamp waiting for me in the morning! She’ll definitely zap the ice cream right out of me.

I was supposed to start the program on Monday, but really needed to get a solid 7 miler in. My plan is to use Tina’s Bootcamp as cross training during my half marathon training. It’s only 6 weeks away! That’s actually terrifying to me. I am only at 7 miles and that’s just a bit over half…Tina’s going to help…I hear she does wonders like that.

What’s your favorite DVD workout?? When do you like to turn them on?? In the morning? Or when you just can’t seem to get the motivation to drive to the gym??

I am really only experienced in Insanity. I LOVE insanity. It gives me no excuses to NOT workout. All you have to do is press play! (I may or may not have stole that line from a Shaun T commercial for insanity)

Chicken, Spinach and Mushroom Ragu Lunch

I just popped home quick to let the pups out and to grab a quick lunch. With not too much time, leftovers it was. I just heated up a pot of water, threw in some whole grain penne and topped it off with left over Ragu.

 

Yumoooo. This filled me up in a hurry.

 

 

Now obviously, the majority of people don’t have the luxury of swinging home quick for lunch. So another way that you could swing this, is just to take a portion of the sauce with you to work. Prefreeze it in individual portions so all you have to do is grab the bag of Ragu and you are on your way and cook some pasta up in the AM to bring along.

 

Or, something you may not have thought of before….RAMON NOODLES. Yes, those crappy little, should never eat packages of noodles.

 

The reason that you shouldn’t eat those noodles is because of the high sodium dressing that come along with them. Minus the dressing they are simply noodles. Grab those packages for 39 cents at you supermarket and heat up those noodles in your microwave at work. Top it off with your Ragu and you’ve got a lunch to be jealous of.

 

The best choice however, would be the whole grain pastas. The reason, besides the fact that it is healthier for you than normal white pasta, is that it will fill you up faster. You will need to eat less of it to feel full. So when you are choosing pasta, steer yourself towards the healthier and more satisfying whole grain pasta.
