3 Ingredient Peach Cake Smoothie

Do you ever have those days where you just can’t seem to focus?? I got up this morning with the intention of going out on a quick run to start off the day. But, the chill in the air made me lay in bed for a while looking at pinterest. Pinterest is my favorite way to wind down the day and to start my  day. It allows me to just chill and scroll through things mindlessly, while feeling like I’m actually doing something…even though I’m most definitely not. 🙂

After a bit of scrolling, I jumped in the shower, made some coffee and watched a bit of Burn Notice. They had a great little marathon going this morning. When the coffee started to kick in, everything on my TO-DO list for the day started running through my head and that finally got me up and running. I answered some emails, finished getting ready and ran out the door like a mad woman, smoothie in hand. It’s amazing how coffee can get you from being lazy to running frantically so quickly. The smoothie ended up being amazing even though it was thrown together quickly and only has 3 ingredients! The best kind of breakfast!

Ingredients:

1 Cup Frozen Peaches 1 Scoop Cake Batter Protein Powder
1 Cup Almond Milk

Put it all in a blender and call it breakfast! If I were thinking correctly I would have connected Cold Weather + Cold Smoothie = NO FUN. But! Problem solved  when you crank the heat in your car. Just don’t mention the fact that it was only 62 degrees and I’m complaining about it being cold…my father would disown me.

Now at work, with loads to do, and little focus. I’m trying to find a way to get back on the right track. Normally, coffee is the answer. Done that already today…now I’m up for Plan B.

Any suggestions?!

Slow Cooked Buffalo Chicken Flatbread

This morning, I woke up at 6 to try out the Jillian Michaels Yoga DVD Workout. Today was supposed to be my rest day after the 7 mile run yesterday. Instead, I wanted to give her DVD a try because it was low impact and yoga does great things for healing muscles. I have also heard GREAT things about her DVD workouts and really wanted to give one of them a go.

I actually really liked it! She has a different take on yoga in the sense that she doesn’t focus on the static movements that many others do. I find yoga to be slightly boring, but Jillian incorporates deliberate movements that target just about every muscle in the body. FOr an early morning workout, it’s perfect. All you have to do is roll out of bed and flip on the TV. Not much to it. And she will DEFINITELY make you sweat.

After the workout, I sat down at the computer for some work. whipped up some breakfast and headed out on the road. For breakfast I indulged in a LOVELY Spinach Protein Smoothie. OH GOOD YUM.

 

Ingredients:

1 Frozen Banana 1 Handful of Spinach Leaves
1/2 Cup Frozen Blueberries 1/2 Cup Almond Milk
2 Full Tablespoons Chocolate Protein Powder

It may not look all the pretty, but it was good. I have been dying to give the spinach deal a try just to see how it went and I really enjoyed it! You will definitely be seeing a few more smoothies with spinach leaves in there!

Work was crazy. I just ran around all day. I also had to deal with some shenanigans trying to find the pups a place to stay on saturday night because Brent and I are going camping with some friends. That was a headache. I got a new dishwasher! Fun! But it’s legit been washing the first load for the past two hours…annnnnnd it’s still going. Mer.

For dinner, I delved into that Slow Cooked Buffalo Chicken and made a little flatbread! Oh and did I do good things! LOVE! It had some spice, and some zest and some SIZZLE! Yup, I said it!

 

Ingredients:

1/4 Cup Slow Cooked Buffalo Chicken 1 Tablespoon Jalapenos
1/4 Slice Muenster Cheese, Shredded 1/4 Cup Mozzarella Cheese, Shredded
Buffalo Saice to Taste 1/4 Cup Onion, Sautéed

Directions:

1. Sautee your onions. Place all of your toppings on your flatbread and bake at 375 for 5-10 minutes depending on how crispy you want it. Enjoy!!

 

 

 

 

 

This was actually very low calorie as well! The bread I used was only 60 calories, and with all of the toppings, we are talking about 200 calories! AWESOME. Now, you obviously need more than that to fill the tank, so pair it with a salad, or in my case…Moose Track Ice Cream!

 

I mean really?! What doesn’t complement something spicy better than something sweet?! Hahaha.

Oh well! I’ve got Tina’s Best Body Bootcamp waiting for me in the morning! She’ll definitely zap the ice cream right out of me.

I was supposed to start the program on Monday, but really needed to get a solid 7 miler in. My plan is to use Tina’s Bootcamp as cross training during my half marathon training. It’s only 6 weeks away! That’s actually terrifying to me. I am only at 7 miles and that’s just a bit over half…Tina’s going to help…I hear she does wonders like that.

What’s your favorite DVD workout?? When do you like to turn them on?? In the morning? Or when you just can’t seem to get the motivation to drive to the gym??

I am really only experienced in Insanity. I LOVE insanity. It gives me no excuses to NOT workout. All you have to do is press play! (I may or may not have stole that line from a Shaun T commercial for insanity)

Blueberry Mango Smoothie and Surprise Date Night Dinner!

So I’m a little behind on my posts, but I have a VERY good reason why, which you will find out at the end of the post 🙂

Yesterday, I ran out of the house in a hurry to get to the office out in Melbourne. My extremely long drive that I am really happy has an end at some point. Another quick breakfast to make, and that is also very easy on the go, is obviously a smoothie. I had bought some frozen mangos a little while ago and felt like this would be a great time to use them. It was really simple as far as smoothie go, but really filled me up for the day.

Ingredients:

1/2 Cup Frozen Mango 1/2 Cup Frozen Blueberry
1/2 Cup Almond Milk 1 Tablespoon Agave Nectar

When it came time for lunch, in the office that never eats lunch…I was ill prepared once again and just munched on a few snacks that were lying around. Seriously, I was dying and that will be the last time that this EVER happens. It’s not only really terrible for you, but by the end of the day I could turn into this little monster that could really eat a chair if I was given the opportunity.

In Florida, we are coming to the end of our rainy season, Thank Heavens! But, yesterday was no exception, we got a lovely rain storm for my drive home. I ended up stopping at a gas station to fill up and wandered inside for a quick bite to eat…I was starving. The one thing that really bothers me about gas stations is that there really aren’t many okay options to pick (not that you go to gas stations for a healthy bite to eat). Beef Jerky was always one of my go tos because it is lean. low calorie and high in protein. You really can’t ask for a better snack. Not eating meat, I settled on some baked lays.

When I got home, I was greeted with this:

And just to set the scene, from the back room Brent had “That’s Amore” blasting. I’m not much of a sappy, lovey dovey kind of girl and he said that was the best he could think of without it making me uncomfortable haha. It was perfect!

Brent made a salad with tomatoes and a sun dried tomato dressing. Yumm. And for dinner, it was the classic pasta with red sauce.

On the side, he made some garlic bread as well.

The basil on the bread was actually a very nice touch. It was really a get surprise and a yummy dinner.

We probably skimmed the top of the pasta bowl when we were both full. I laughed at how much pasta was left over and Brent said “Oh no…there’s more in the kitchen.” The man made the whole box of pasta. A POUND of pasta. I absolutely died.

This isn’t the first time that I have heard of a guy cooking a pound of pasta when it’s dinner for two and I am sure everyone out there has a FANTASTIC story of their own on this subject.

Overall, the dinner was amazing. I absolutely loved it and he completely surprised me, which is obviously the best part. For the rest of the night, we sat on the couch and watched some movies while drinking wine. Needless to say, the run I had planned didn’t get accomplished, nor did the post that I was planning on doing. But this was MUCH better!

I squeezed in my 3.6 mile run this morning and it was brutal. I was exhausted. It was probably the slowest I have ever run in my life. It really made me think about how different training on a treadmill and on street runs really is, even considering the flat Florida roads. Absolutely noted. I have a 4 mile run scheduled for saturday, which I have done in the past, but this just puts things back into perspective for me.

Peach Mango Smoothie and Sun Dried Tomato Egg Sandwich

This morning was a slow one. After being out late with a few friends for labor day, I woke up and grabbed for the coffee. As soon as I sat down at the computer to start going over some work emails, the phone calls and emails just never seemed to stop. Before I knew it, it was 9:30 and I hadn’t had breakfast or gotten ready to walk out the door. So breakfast was a quick and easy smoothie that Maggie had whipped up. Yummo.

Ingredients:

1 Mango 1 Peach
8 Medium Ice Cubes 1 1/2 Cups Fat Free Greek Yogurt
1 Teaspoon Cinnamon 1 1/2 Tablespoons Sugar

Directions:

1. Puree the mango and peach. Add in the remaining ingredients and blend. Top with granola.

BOOM! Delicious Mango, Peach Smoothie! Perfect way to start off the work day…well mid morning snack I guess.

When lunch finally rolled around, I was craving eggs. I was so surprised at how well it came out. I felt like it could have gone either way, but man did it satisfy! I wanted a second one after this was polished off!

On this sandwich there is:

1 Over Easy Egg 2 Table Spoons Sun Dried Tomato Hummus
1/4 Cup Sprouts 2 Tablespoons Fresh Chives
1 Honey Wheat English Muffin

Surprisingly, overwhelmingly good. I topped my meal off with 2 Whatever You Got Oatmeal Cookies from last night and went back to work.

Tonight I wen to the gym for a quick workout on the treadmill. I am not so much into long distances on the treadmill because I find them really boring and if I attempt to, chances are I’ll just quit half way through. So, tonight I did a 25 Minute Interval Workout.

 

Now for some tea, and TV!

Tomato, Basil and Garlic Sauce

This morning I literally ran out the door to get to a meeting and didn’t have much time to think about breakfast or anything else for that matter. So instead of staring at my refrigerator for a solid five minutes just waiting for something to jump out at me, I went to the freezer and grabbed the bananas I froze earlier this month. Banana Smoothie Tuesday it was. Normally I throw some combination of milk, yogurt, ice and fruit into the blender. But with two of my my ingredients on the dairy list…I had to quickly rethink what I was making. Instinctively, I grabbed my Almond Milk and Silk Soy Yogurt and added them to the mix. Next came the banana and a splash of cinnamon. It wasn’t what I was expecting, but it was delicious.

I am going to have to tweek this one a bit to get it perfect but it was a good start. The flavors are a bit more tart and less creamy than the yogurt and milk I am used to.

After my meetings, I stopped off at the supermarket to pick up a few things for lunch. And I was STARVING by this point. Everyone knows how you really shouldn’t walk into the supermarket when you are starving because you will end up buying out the place…well going in there and saying no to the Apple Streusel samples and the freshly baked bread samples, WHILE STARVING, heart wrenching. I am glad that I walked away, but talk about restraint.

For lunch, I ended up making a yummy and healthy Veggie wrap with Red Pepper Hummus. Loooooved it.

This was actually unbelievably low in calories and really satisfying. The wrap itself was only 90 calories. When you add all the veggies and the hummus, you are looking at about 200 calories TOTAL! You could always add some grilled chicken, or sliced turkey to this to really amp up the wrap.

For dinner I decided to have a go at making my own red sauce. No instructions available. The sauce has an extremely strong flavor to it so you really don’t need to add much to your plate to have something packed with flavor. So! For my Tomato, Basil and Garlic Cream Sauce:

Ingredients:

1lb of Pasta, Rigatoni 1/2 Cup Sun Dried Tomatoes in Oil, Drained
3 Cloves of Garlic, Chopped 1/4 Cup Fresh Basil, Chopped
2 Tablespoon Balsalmic Vinegar 1 teaspoon Salt
1/2 Teaspoon Pepper 2 Tablespoons Olive Oil1/2 Cup Cherry Tomatoes, Chopped
4 Tablespoons Water

Directions:

  1. Cook your pasta. In a small container or a small blender add the Sun Dried Tomatoes, Cherry Tomatoes, Garlic, Basil, Pepper, Salt, Olive Oil, Balsamic Vinegar, and water.

2. Blend everything together until it is smooth. There is going to be a small amount in the container, but it WILL COVER all of your pasta. You can also add a bit more water if you want to lighten it up more. The sauce has a ton of flavor in it and you don’t need much to get the job done.

I ate the pasta just like this. I would definitely add some chicken to this if you like chicken. It goes really well with the sauce. You can also add some artichoke hearts to it as well. They would compliment the flavor of the sauce. I could also see some ground beef adding to this dish quite a bit too. This only took me about 15 minutes to make (the time it takes to boil water and cook pasta). So it would be perfect for a quick dinner after word.

I loved it. This will definitely be making an appearance for lunch tomorrow….maybe in a sandwich?!
