Valentine’s Day Sugar Cookies

Yesterday afternoon finished up with some Valentine’s Day Sugar Cookies. I was really in the mood to bake considering I hadn’t really been home for a long period of time and it was still snowing. The sugar cookie idea came from the desire for something simple…and that just developed into something a bit more festive.

Valentine's Day Sugar Cookies

 

Ingredients:

2 3/4 Flour 1 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder 2 Sticks Butter, Softened
1 1/2 Cups Sugar 1 Egg
1 Teaspoon Vanilla

Directions:

1. Blend the butter and sugar until smooth. Then add in the egg and vanilla.

2. In a separate bowl, mix the flour, baking soda and baking powder. Then gradually add it into the wet mixture.

3. Roll the dough out flat and cut into the shape you want. I obviously chose hearts!

4. I covered my cookies sheets with tin foil. Then, bake it at 350 degrees for approximately 8-10 minutes. Be sure to watch them closely because you do not want them to turn brown.

Let them cool before you put the icing on them.

 

For the Icing:

Ingredients:

2 Cups Confectioner’s Sugar 1 1/2 Tabelspoons Meringue Powder
3 Tablespoons Warm Water 1 Drop Red Food Dye

Directions:

1. In a small bowl, mix the dry ingredients. Then whisk in the water until consistent throughout.

Just spread it on the cookies when they are cool and top with any sprinkles you like! If you want a thinner icing, add a tiny bit more water.

Originally, I was making these solo, then Mama C joined in the icing part of it. But after about 25 cookies, she wasn’t really interested in helping any longer. Brent had just walked in the door and I asked if he wanted to help with the sprinkles portion. Simple and easy.

I finished icing the first one, handed it to Brent and as I was topping off the second, I glanced over and saw this monstrosity:

He ended up munching that one pretty quickly.

For a quick and easy sugar cookie, these ended up being great to take up an hour or so in the afternoon. AND, I have cute cookies ready for V-Day!

 

Simple Maple Cookies

Hello from Naples!! Yesterday afternoon Brent and I packed up the puppies and headed down to Naples for the weekend to celebrate an early Christmas with his family. Last night we ate dinner at Miller’s Ale House in Naples and I think I might still be full. WOOF.

But to top off my baking day yesterday, I made a second dozen of cookies that came out really nicely. They are a Simple Maple Cookie. It takes only 15 minutes to bake and 5 minutes to mix up. Can’t get any easier than that. They also have a very light and simple flavor, which I love. Sometimes you just don’t want that huge chocolate  chip cookie and you just want a little something sweet. THESE WOULD BE IT. A little no guilt cookie 🙂

Maple Cookies

Ingredients:

1 Stick of Butter                                        1/2 Cup Light Brown Sugar

1 Egg                                                            1 1/2 Cups Flour

2 Tablepsoon Maple Syrup

Directions:

1. In a medium sized bowl, beat the butter and the sugar together.

2. Then add in the flour and the maple syrup.

3. Bake the cookies at 350 degrees on a nonstick surface for

15 minutes. I used tin foil but you can also use parchment paper or just spray the pan.

They were incredibly easy to make and you absolutely have all the ingredients just sitting around your kitchen. PERFECT for trying to chip away at everything sitting in the cabinets!

A Tummy Twister

Yesterday, for lunch I had brought some pea soup to work thinking it would be a really easy thing to just heat up and munch on while I was shuffling through paperwork. It actually turned out really well because it was so easy to heat up and was absolutely delicious.

I spent the day running around as usual and left around 5 to speed back to Orlando to pick up my race bib and packet. EXCITING! When you walk into Track Shack, they have a large board set up with all of the bib numbers. You find your number, and tell the ladies in back so they can grab everything for you. When I looked up Brent and my numbers, I realized we had the SAME EXACT NUMBERS from Autumn Rock N Run. 1286 and 1287.

I asked the ladies if that was normal, because they obviously didn’t select number based upon alphabetical order. They said it’s random number generated and that is actually EXTREMELY weird. I don’t know if this is a good omen or a bad one, but all I know is that every time I think about the race…my stomach twists up in knots.

 

So nervous for this run. It will honestly be the first time that I have intentionally ran 13 miles and in training, they don’t have to get up to that milage.

 

I also picked up some of the energy chews that I’m planning on munching on before and after the race. I have been trying out a few different chews and energy supplements for during the run and have found these to be the best. The energy gels just don’t sit well in my stomach.

I got the Shot Bloks for a pre-race energy boost because they tend to make your mouth water a bit, which isn’t exactly what you want while running. The GU Chomps are definitely best for energy along the way. They are easy to carry around, don’t make you thirsty and don’t make me nauseous.

And lastly, I picked up 2 of the 13.1 magnets for my car and Brent’s car. As soon as this run is over, I am crawling over to me car and slapping that 13.1 magnet on my car in celebration. This is going to be my little badge of achievement. BOOM.

I’m nervous and excited at the same time. But I figure that is the best mindset to be in when you are challenging yourself.

A Quick Macaroni Dinner

After I ran out the door to a few meetings for the afternoon and then started on a few errands. The pups were in need of some food, so Brent and I stopped by our local pet store to grab a bag. Whenever I go to the pet store, I usually walk out with some unnecessary toy, treat or dress up thing. I love using the dogs for my own amusement…it’s terrible but its fun…for me. 🙂

Today, I picked up some treats. Bones to be exact.

 

 

Bacon always gets spoiled with the bigger and the baddest. How crazy is that thing?!

After the pet store, we headed back and I whipped us up some dinner. It was REALLY quick because that’s about all I had in mind. When I get hungry, I get cranky. I will whip my head around because you asked me what time it was. Seriously. You don’t want to get in between my food and me when this girl is hungry.

So I made some macaroni with a ragu alfredo sauce, salmon and a whole bunch of broccoli. From the look that I got from Brent, you would have thought that I had made something from the heavens. But it took me no time at all to throw together.

 

It did turn out well. I topped it off with some grated parmesan cheese and bread crumbs. Great move I think.

For the rest of the night, I’m just sipping on some tea and catching up on a little reading. I have an early morning tomorrow and will most likely be to bed early!

 

How do you spoil your pets?? Fun treats?? Dress them up?? Take them to parks??

I spoil the dogs like crazy. But I have to say dressing them up and just playing around with them is my favorite. The happier they are, the more fun I’m having. Well…besides when I put eyebrows on Bacon…that was definitely for my own enjoyment!

 

3 Ingredient Peach Cake Smoothie

Do you ever have those days where you just can’t seem to focus?? I got up this morning with the intention of going out on a quick run to start off the day. But, the chill in the air made me lay in bed for a while looking at pinterest. Pinterest is my favorite way to wind down the day and to start my  day. It allows me to just chill and scroll through things mindlessly, while feeling like I’m actually doing something…even though I’m most definitely not. 🙂

After a bit of scrolling, I jumped in the shower, made some coffee and watched a bit of Burn Notice. They had a great little marathon going this morning. When the coffee started to kick in, everything on my TO-DO list for the day started running through my head and that finally got me up and running. I answered some emails, finished getting ready and ran out the door like a mad woman, smoothie in hand. It’s amazing how coffee can get you from being lazy to running frantically so quickly. The smoothie ended up being amazing even though it was thrown together quickly and only has 3 ingredients! The best kind of breakfast!

Ingredients:

1 Cup Frozen Peaches 1 Scoop Cake Batter Protein Powder
1 Cup Almond Milk

Put it all in a blender and call it breakfast! If I were thinking correctly I would have connected Cold Weather + Cold Smoothie = NO FUN. But! Problem solved  when you crank the heat in your car. Just don’t mention the fact that it was only 62 degrees and I’m complaining about it being cold…my father would disown me.

Now at work, with loads to do, and little focus. I’m trying to find a way to get back on the right track. Normally, coffee is the answer. Done that already today…now I’m up for Plan B.

Any suggestions?!
