Laziness to the Next Level

This morning I woke up and went for a 9 MILE RUN! WHOOOOOOOOOO. I’m actually really pumped about it because it was the second time that I have ever reached the 9 mile mark. On top of that, I ran my fastest 10K. Speed Demon! Not really, I am hoping to break the 2 hour mark at the half marathon and today I came in with a perfect 10 minute mile pace. Taking traffic stops and just gradual slowing down, I think I’m on the right track to beat that goal ūüôā

I was actually starting to cramp up a bit around mile 3, which made me a bit nervous…because there are 6 more miles to go. And when I start cramping, it’s usually my abs, back or calves. None are fun. Around mile 7 my knee started to voice it’s opinion on continuing, but it’s thoughts were squished. After about a mile of complaining my knee gave in and just stopped hurting. Strange.

As soon as I got back, I stretched for a good 15 minutes. I have noticed that it takes a decent amount of time for my legs to recover after my long runs and I have a feeling that it’s because I’m just skipping out on the stretching all together. Everyone has always told me about the importance of stretching but I usually faked it. I’m really not a fan for some reason.

For breakfast, I was staring at the mountain of bread that I bought last night and was debating between these two guys:

 

Originally, I wanted to get some cinnamon bread, but instead these two caught my eye. PUMPKIN BREAD AND CARAMEL APPLE SAY WHAT?! The cinnamon bread was a no go and these guys found their way into my cart. I popped two slices of the pumpkin spice bread into the toaster and then ultimate laziness hit.

You run 9 miles in the morning, and funny, making some scrambled eggs just seems like too much work. I really needed some protein in this meal and eggs is usually the easiest thing to go with. WHELP. My lazy brain came up with an INGENIOUS idea! Microwavable Eggs! Seriously.

I filled a mug up with water, dropped an egg in it and threw it in the microwave for 2 minutes and BOOM! An over Hard Egg with very little clean up!! I just used a spoon to pick the egg up and plop him on my plate.

It was so good too! The texture is different from a dropped egg because it doesn’t have those thin areas that you find when you boil the water first. It’s much more solid and hearty tasting. I’m already thinking about all of the fin things that I can do with this new discovery.

Eggs…in 2 minutes! Amazing.

Chocolate Strawberry Pancakes and Weekend Festivities!

This weekend was FUN. It was the perfect combination of relaxing and going crazy. The best kind of weekend. I ended up working in the morning on Friday and then heading home due to Sandy. All of the offices were closed on the east coast. There were also school closings  for the hurricane. A HURRICATION!

Sandy is now hitting aiming itself at the north and people are starting to prepare for the worst. I am glad that we didn’t really see much of the storm, just a bunch of wind. It’s a bit funny that people up north are getting a little hurrication, but I have to say, the best day off from school that I got when I was up there was a Cold Day. For Cereal. It was sub-zero temps and we were still going to school. When it was forecasted to be -20 they decided to call school. It ended up being warmer than the previous day and we had a fantastic day off from school ūüôā

Anyways, I went out with some¬† friends for Halloween on Friday. I was dressed as the Black Widow and the other two girls were super girls too. the boys went as the most¬† terrifying¬†clowns. When Brent put on his mask, Oreo went¬† from happy puppy to the most terrified puppy in the world. She wouldn’t even go near him.

In the morning, I really wanted something terrible for me. Sometimes, I just need that. Haha. However, I still found a way for it to be healthy. MER. BUT DELICIOUS! Chocolate Strawberry Pancakes! Ohhh YEaaa Baby.

Ingredients:

1/2 Cup Pancake Mix 1 Scoop Chocolate Protein Powder
1/4 Teaspoon Cocoa Mix 1/3 Cup Sliced Strawberries
3 Eggs 1/3 Cup Almond Milk

Directions:

1. In a bowl, mix all of the ingredients. Heat up a skillet to medium heat. Spray it with a non-stick spray and place a 1/4 cup of batter on the skillet. When bubbles surface on the pancake, flip it.

And FINITO! I topped it off with some frozen strawberries that I melted in the microwave and a bit of syrup. You can use pancake syrup, honey or agave. Any of them work out fantastically. I spent the day putzing around, and not doing too much. I met up with Brent and we went out to Wekiwa Springs Campground to watch the Gator vs Bulldog game. A friend of ours had a blow up big screen projecting the game out on the camp ground. SO MUCH FUN! the night was perfect for sitting outside and enjoying the game with some friends. The pups even got to enjoy the afternoon and come with us.

Sunday was full of more putzing. I took it slow getting up. Eventually went for a 4 mile run, which was way more difficult than it should have been. Seriously, I don’t think I am ever going to take that long of a break from running again. It was brutal. When I got back, I was sitting outside in the backyard and two pretty little butterflies caught my eye. THEN, all of the spiders death traps awaiting the poor little guys. Tons and tons of spider webs were on the top of the screened in area. I saw a butterfly get caught the other day in one, and it killed me to watch the little guy go…so I ripped down all the spider webs. I have to show you what these spiders look like…

I have never seen anything like them. There is nothing like these guys up north. It is a spiny back orb weaver. They do make really cool looking webs and apparently they will bite you. But, I’m not going to lie, the Banana Spider¬†that I came across last time I was hiking in Wekiwa¬†Springs was definitely a little creepier looking.

After making my backyard a safer place for the pretty little butterflies, I made  a Salmon Salad Sandwich on an Everything Flat Bagel. So good. I forgot how much I like the canned salmon and it definitely tastes better to me than the tuna salads. I feel like there is more flavor to the salmon.

Last, but not least, I FINIALLY¬†GOT TO GO TO JEREMIAH’S! I was so excited to give it a go. I’ve been hearing such good things about it that I’ve just been looking for the opportunity to go. Jeremiah’s is an Italian Ice place that makes all of their italian ice daily. YUP. They change up their flavors everyday.

I’m the weirdo that asks what the best flavors are and¬† holds up the line. After literally quizzing this poor woman on all of their flavors, I decided on Peanut Butter and Cookies and Cream.


The cookies and cream tasted like they mashed up Oreos and mixed it into italian ice. So freaking good. The peanut butter was also phenomenal. They are much¬† creamier than I expected because when I think of Italian ice I think of that Lemon Italian Ice that we all had growing up. It’s tart and has more of an ice base I guess. This was more of a cross between italian ice and ice cream to me. But I loved it! Definitely going back!

This is getting crazy long for a post so I’ll leave you with that! YUMMMM.

Mine was definitely the cold day. Who even knew that existed!

Slow Cooked Buffalo Chicken Flatbread

This morning, I woke up at 6 to try out the Jillian Michaels Yoga DVD Workout. Today was supposed to be my rest day after the 7 mile run yesterday. Instead, I wanted to give her DVD a try because it was low impact and yoga does great things for healing muscles. I have also heard GREAT things about her DVD workouts and really wanted to give one of them a go.

I actually really liked it! She has a different take on yoga in the sense that she doesn’t focus on the static movements that many others do. I find yoga to be slightly boring, but Jillian incorporates deliberate movements that target just about every muscle in the body. FOr an early morning workout, it’s perfect. All you have to do is roll out of bed and flip on the TV. Not much to it. And she will DEFINITELY make you sweat.

After the workout, I sat down at the computer for some work. whipped up some breakfast and headed out on the road. For breakfast I indulged in a LOVELY Spinach Protein Smoothie. OH GOOD YUM.

 

Ingredients:

1 Frozen Banana 1 Handful of Spinach Leaves
1/2 Cup Frozen Blueberries 1/2 Cup Almond Milk
2 Full Tablespoons Chocolate Protein Powder

It may not look all the pretty, but it was good. I have been dying to give the spinach deal a try just to see how it went and I really enjoyed it! You will definitely be seeing a few more smoothies with spinach leaves in there!

Work was crazy. I just ran around all day. I also had to deal with some shenanigans trying to find the pups a place to stay on saturday night because Brent and I are going camping with some friends. That was a headache. I got a new dishwasher! Fun! But it’s legit been washing the first load for the past two hours…annnnnnd it’s still going. Mer.

For dinner, I delved into that Slow Cooked Buffalo Chicken and made a little flatbread! Oh and did I do good things! LOVE! It had some spice, and some zest and some SIZZLE! Yup, I said it!

 

Ingredients:

1/4 Cup Slow Cooked Buffalo Chicken 1 Tablespoon Jalapenos
1/4 Slice Muenster Cheese, Shredded 1/4 Cup Mozzarella Cheese, Shredded
Buffalo Saice to Taste 1/4 Cup Onion, Sautéed

Directions:

1. Sautee your onions. Place all of your toppings on your flatbread and bake at 375 for 5-10 minutes depending on how crispy you want it. Enjoy!!

 

 

 

 

 

This was actually very low calorie as well! The bread I used was only 60 calories, and with all of the toppings, we are talking about 200 calories! AWESOME. Now, you obviously need more than that to fill the tank, so pair it with a salad, or in my case…Moose Track Ice Cream!

 

I mean really?! What doesn’t complement something spicy better than something sweet?! Hahaha.

Oh well! I’ve got Tina’s Best Body Bootcamp waiting for me in the morning! She’ll definitely zap the ice cream right out of me.

I was supposed to start the program on Monday, but really needed to get a solid 7 miler in. My plan is to use Tina’s Bootcamp as cross training during my half marathon training. It’s only 6 weeks away! That’s actually terrifying to me. I am only at 7 miles and that’s just a bit over half…Tina’s going to help…I hear she does wonders like that.

What’s your favorite DVD workout?? When do you like to turn them on?? In the morning? Or when you just can’t seem to get the motivation to drive to the gym??

I am really only experienced in Insanity. I LOVE insanity. It gives me no excuses to NOT workout. All you have to do is press play! (I may or may not have stole that line from a Shaun T commercial for insanity)

Slow Cooked Buffalo Chicken and a Breakfast Scramble

I meant to post this yesterday, but I guess today will do as well!

Yesterday I had woken up and ran 7 miles. It actually felt really good. The morning was cool and I just seemed to power through it. After the run, I was looking for something that was high protein, lean and fairly light. I wasn’t much in the mood for a high carb meal. I ended up making, what I like to call, A Breakfast Scramble. In a Breakfast Scramble, there is just about anything that you have lying around. There are no real ingredients, just what you happen to have sitting around. Yesterday, was a Broccoli Cheddar Breakfast Scramble.

Ingredients:

1/4 Cup Steamed Broccoli 2 Eggs, Lightly Scrambled
1 Tablepsoon Shredded Cheddar Cheese Salt and Pepper to Taste

I had some leftover broccoli in the fridge that I steamed in the microwave for two minutes. I topped it off with some cheddar cheese and placed the lightly scrambled eggs on top. Sprinkle some salt and pepper on there and you have got a yummy, high protein breakfast. Perfect.

Brent was actually on his way over to drop Bacon off before work and I had made some buffalo chicken for him this weekend in the slow cooker. Even though I am vegetarian, I told him that if he bought the chicken, I would prepare it for him. Buffalo chicken is by far his favorite, so that’s what ended up happening.

For lunch, I made him a buffalo chicken sandwich.

Ingredients:

1.75 Pounds Chicken Breast 1 Cup Buffalo Wing Sauce
1 Hamburger Bun 1/4 Cup Lettuce

Directions:

1. In a crock pot, place your three chicken breasts and cover them with a cup of buffalo sauce. Cook on low heat for 7-8 hours.

2. After 7-8 hours, drain all of the sauce. Using a fork, break apart the chicken into shreds.

I ended up just putting it into the fridge afterwards because it finished up at 830 on Sunday. I plan on using this chicken throughout the week in as many recipes as possible. On the sandwich, I stirred in 1 Tablespoon of buffalo sauce into the single portion and put it on the hamburger bun.

Brent HATES blue cheese, so if that had not been the case, there would be some blue cheese on there. Or maybe some Muenster cheese?! He LOVED the sandwich though. Some of my other plans would be a salad and a flatbread. So stay tuned!

Today, is another day in Melbourne. I just finished up Jillian Michaels Yoga DVD, jumped in the shower and am now starving. I swear, there aren’t enough hours in the day.

Chocolate Peanut Butter Lava Pancakes

I have been pretty much drooling over the idea of some peanut butter pancakes and just haven’t had the morning to actually put it all together.

But First! Fun! I went to my first Blogger Meet Up on Wednesday Night with the Central Florida Lady Bloggers. It was really fun to meet some local ladies that have all found a niche in blogging. Each of them had something different that they were passionate about and it really shows through in their blogs.

Definitely check out their blogs. Some of them are newer, some seasoned vets. But you will find vegetarians, fitness instructors, photographers, beauty gurus and anything else you can think of! In the picture, Carolina, Stephanie, Marilyn, Kerry, Rachel, Nadege, Colleen, Margarita, Danielle, and Christine.

It was great to meet some of the local bloggers and just to get to know some different people.

NOW. For the main even of BREAKFAST. I LOVED this. Chocolate Peanut Butter Lava Protein Pancake! For REAL.

Ingredients:

1/3 Cup Pancake Mix 1/4 Cup Chocolate Protein Powder
2 Egg Whites, I used 1 yolk as well 1 Tablespoon Water
1 Tablespoon Peanut Butter, Melted 1/4 Teaspoon Cocoa Powder
Directions:
1. In an bowl, mix all of the ingredients until well mixed. Add a little more water if needed. The batter SHOULD be VERY thick. This is what will give it the lava effect.
2. Heat up the skillet to medium heat and spray with cooking spray. Now put the whole batter on the skillet to make 1 pancake. You may have to use a spoon to spread it out a bit. After 20 seconds, flip the pancake and cook the other side for an additional 15 seconds. Remove.
The inside will be chocolately and peanut buttery and gooey. I topped mine with a half of a banana and spritzed a little agave nectar on top. It was delicious and really filling.
One reason I really like this recipe is because it only takes a few minutes to pull together. Sub 5 minutes. You don’t need any fancy toppings or to get too complicated. The pancake really takes care of the flavor for you. It is also PACKED with protein and will keep you full until you are ready for your next meal.
