Peanut Butter, Banana Puppy Cupcakes

It’s no surprise that I spoil our dogs. Brent blames me for Bacon being spoiled, which is probably true. 🙂

I’ve been watching re-runs of DC Cupcake and it really got me in the mood to make something fun for the dogs. I’ve been thinking about making some treats for the and all I needed was the inspiration to make some cupcakes to help make the decision easy.

I knew the basic ingredients I wanted to put in them, and just kind of wen from there. The doggies seemed to really like them…and people did too!

Peanut Butter Pupcakes

 

Ingredients:

2 Whole Ripe Bananas 1/2 Cup Applesauce
1/4 Cup Peanut Butter 2 Cups Wheat Flour
1 Teaspoon Baking Soda 1/2 Cup Canola Oil

Icing

2 Whole Ripe Bananas 1/2 Cup Peanut Butter

Directions:

1. Preheat the oven to 350 degrees. First, mix the canola oil and applesauce. Then add in the peanut butter until it is smooth. Last, add in the flour and baking soda.

2. In a separate bowl, mash up the bananas and then add them into the batter. Pour the batter into mini muffin tins with paper liners. Cook them for 15 minutes.

Icing

1. Mash the banana until they are as smooth as possible. Then add in the peanut butter and mix. This will determine the thickness of the icing.

2. When the pupcakes are cooled, top them off with the icing and let the little nuggets enjoy!

The little spoiled doggies loved their little treats and I didn’t feel bad giving it to them because I know EXACTLY what’s in them. And it didn’t include any ingredients that I wouldn’t feel comfortable giving them any day of the week.

A few people tried them too…and they weren’t bad at all. Think banana bread without the sugar topping. They were delicious.

When I’m going out to the store and just want to pick up some treats to have in the cabinet, I love the Trader Joe’s Dog Treats. Simply because when you read the label, you know every ingredient. If you wouldn’t eat it, why would you feed it to them??

I’ve tasted the Trader Joe’s treats…and they are quite bland. Tastes like food…but bland. I don’t need to worry about anyone eating those 🙂

Puppy Peanut Butter Birthday Cake!

I’m not above spoiling my dogs, and Brent would even argue that I spoil them too much. But, I’ve been wanting to make something for Oreo’s birthday for, well, the past 2 months because he birthday is just before Christmas.

With everything that has been going on, I haven’t had time to make something for the two of them. After deciding that paleo was going to be the plan for the next month, it became a great time to use up some flour.

Puppy Birthday Cake

Ingredients:

1 Eggg 1/3 Cup Honey
1/4 Cup Peanut Butter 1 Cup All Purpose Flour
1/4 Cup Canola Oil 1 Teaspoon Baking Powder
1 Teaspoon Vanilla

Directions:

1. Preheat the oven to 350 degrees. Mix the egg, peanut butter, oil, honey and vanilla. Then mix the flour and baking soda together. Add it to the wet mixture.

2. Split the batter in half and pour it into 2 ramekins. Bake for 20 minutes.

2. Once cooled, top with peanut butter.

Even though Oreo looks completely unexcited to eat her cupcake, she was actually working on her cute face so I would give into her and let her eat it.

Look at those tortured little eyes. When she finally got a taste, she wasn’t really sure how to eat it and just licked the peanut butter off the top until I broke it into pieces for her.

Bacon on the other hand, knew exactly what to do.

A Secret Twi-Hard

Last night Brent and I had gone to pick up his truck from the Ford Dealership because it was having some trouble earlier this week. Turns out the part that he needs is back ordered until 2013. Bad Luck. On the way back, we stopped by Menchies for some frozen yogurt. I LOVE this place. It’s a mix your own frozen yogurt place and they switch up the flavors depending on the season.

I was delightfully surprised to find peppermint and eggnog as some new additions 🙂 While we were eating our ice cream, Brent suggested to go see a movie, considering the theatre is literally 10 feet away. When I asked what movie he wanted to see…he mentioned Twilight. YUP. Big man is a secret Twi-Hard. This is not my joking face.

I have caught him in the past watching it when it was on TV and just laughed at him. He says he only likes the second one because it has more dogs in it…HMmMmMm. Just admit it…you like the vampires too.

This one was a bit more…mushy..than the others. It was good, but it wasn’t what I was expecting.

Breakfast

This morning I woke up with a headache and tried to stay in bed and maybe shake it off, but no dice. I eventually just rolled out, showered and made up some breakfast. I went with something simple, that will get me through the day. English Muffin, peanut butter, honey and sliced banana. YUM.

Is there a show or a movie that you like to watch, but just prefer to watch it by yourself?? 

In college, my roommate and I used to put SpongeBob on in the afternoon after classes while working on some homework. We would shut the shades to the apartment because we didn’t want anyone walking by to see. 🙂 Secrets out!

Chocolate Peanut Butter Lava Pancakes

I have been pretty much drooling over the idea of some peanut butter pancakes and just haven’t had the morning to actually put it all together.

But First! Fun! I went to my first Blogger Meet Up on Wednesday Night with the Central Florida Lady Bloggers. It was really fun to meet some local ladies that have all found a niche in blogging. Each of them had something different that they were passionate about and it really shows through in their blogs.

Definitely check out their blogs. Some of them are newer, some seasoned vets. But you will find vegetarians, fitness instructors, photographers, beauty gurus and anything else you can think of! In the picture, Carolina, Stephanie, Marilyn, Kerry, Rachel, Nadege, Colleen, Margarita, Danielle, and Christine.

It was great to meet some of the local bloggers and just to get to know some different people.

NOW. For the main even of BREAKFAST. I LOVED this. Chocolate Peanut Butter Lava Protein Pancake! For REAL.

Ingredients:

1/3 Cup Pancake Mix 1/4 Cup Chocolate Protein Powder
2 Egg Whites, I used 1 yolk as well 1 Tablespoon Water
1 Tablespoon Peanut Butter, Melted 1/4 Teaspoon Cocoa Powder
Directions:
1. In an bowl, mix all of the ingredients until well mixed. Add a little more water if needed. The batter SHOULD be VERY thick. This is what will give it the lava effect.
2. Heat up the skillet to medium heat and spray with cooking spray. Now put the whole batter on the skillet to make 1 pancake. You may have to use a spoon to spread it out a bit. After 20 seconds, flip the pancake and cook the other side for an additional 15 seconds. Remove.
The inside will be chocolately and peanut buttery and gooey. I topped mine with a half of a banana and spritzed a little agave nectar on top. It was delicious and really filling.
One reason I really like this recipe is because it only takes a few minutes to pull together. Sub 5 minutes. You don’t need any fancy toppings or to get too complicated. The pancake really takes care of the flavor for you. It is also PACKED with protein and will keep you full until you are ready for your next meal.

I am a fruit gal. I a really really big fan of the blueberry pancakes. They are usually really light and full of that fruity flavor.

Apple Pie for Breakfast!

I love taking anything traditional and putting a little twist on them. Just something that people wouldn’t necessarily expect to make things interesting. This morning, it was apple pie. Yesssssssss. Who doesn’t love a good apple pie?!

I took some of the basics of breakfast as well as apple pie and just mushed them together to see what would happen, and good things happened. Give it a try when you are looking to spice up your morning!

 

Ingredients:

1/2 a Granny Smith Apple                                               2 English Muffins

1/2 Cup Peanut Butter                                                    1 Tablespoon Smart Balance Butter

1 Tablespoon of Sugar                                                   1 Teaspoon Ground Cinnamon

Directions:

1. Split a toasted english muffin in half and top each half off with peanut butter. I used homemade peanut butter that I wanted to try out from the supermarket but any brand should work fine.

 

2. Slice your apples up and put a few slices on each half. If you don’t like granny smith, or don’t have any, try a red apple. It’s closer to the traditional apple pie recipe. Granny Smith is just what I had lying around.

 

3. In a small dish, add the butter, sugar and cinnamon. Microwave for 15 seconds.

 

4. Drizzle this on top of you apples. Don’t go too crazy because this obviously isn’t an extremely nutritious dressing. I only used about half on 4 halves.

And Eat UP!

Some other options for the topping are honey and Agave. These are much better for you than melted butter and would give you the same sweetening effect.

You can also try some light brown sugar as opposed to regular white sugar. It would get you even closer to that authentic taste.
