Summer Peach Sangria and Dave Matthews

This past weekend, I headed to the Dave Matthews Band concert and hung out with some friends. We have been planning on going to the concert for months and it ended our month of wedding craziness and traveling. The past month has been such a whirlwind that it really felt like the first time we could just sit back and relax.

Normally, I would have spent some time trying to figure out exactly what I wanted to bring to the tailgate, but this time it was a really last minute decision. I decided to make a Peach Sangria that was light, cooling and refreshing. And that is exactly what it turned out being. Summer Peach Sangria



1 Tablespoon Minced Ginger 1 750mL Bottle Pinot Grigio
1 Cup Peach Liquer 1 750mL Bottle Prosecco
Frozen Peaches and Frozen Strawberries


1. Mull the minced ginger and add in the pinot grigio and the peach liquor. Then add the frozen fruit and refrigerate until ready to serve.

2. Prior to serving, top it off with the prosecco.

I used Barefoot Pinot Grigio and Cupcake Prosecco. The drink turned out to be the perfect balance of sweet and refreshing. I am not a big fan of sweet drinks.

Instead of making a pitcher of the sangria, I decided to fill up 10 mason jars, and a separate pitcher. I felt like  a single pitcher wouldn’t last very long and everyone would be lucky to even get one drink. The mason jars worked out PERFECTLY. Everyone got their fill of the sangria and the mason jars acted as a great glass to drink from.

Just for the fun of it, I put cupcake liners on the top of the jars and stuck the straws in there. Pinterest has such wonderful ideas! Got to love it!

The concert ended up being so much fun. I hadn’t been to one in such a long time and it really just makes me want to enjoy those summer nights with friends and line up a few more concerts. DSC00283

3 Ingredient Peach Cake Smoothie

Do you ever have those days where you just can’t seem to focus?? I got up this morning with the intention of going out on a quick run to start off the day. But, the chill in the air made me lay in bed for a while looking at pinterest. Pinterest is my favorite way to wind down the day and to start my  day. It allows me to just chill and scroll through things mindlessly, while feeling like I’m actually doing something…even though I’m most definitely not. 🙂

After a bit of scrolling, I jumped in the shower, made some coffee and watched a bit of Burn Notice. They had a great little marathon going this morning. When the coffee started to kick in, everything on my TO-DO list for the day started running through my head and that finally got me up and running. I answered some emails, finished getting ready and ran out the door like a mad woman, smoothie in hand. It’s amazing how coffee can get you from being lazy to running frantically so quickly. The smoothie ended up being amazing even though it was thrown together quickly and only has 3 ingredients! The best kind of breakfast!


1 Cup Frozen Peaches 1 Scoop Cake Batter Protein Powder
1 Cup Almond Milk

Put it all in a blender and call it breakfast! If I were thinking correctly I would have connected Cold Weather + Cold Smoothie = NO FUN. But! Problem solved  when you crank the heat in your car. Just don’t mention the fact that it was only 62 degrees and I’m complaining about it being cold…my father would disown me.

Now at work, with loads to do, and little focus. I’m trying to find a way to get back on the right track. Normally, coffee is the answer. Done that already today…now I’m up for Plan B.

Any suggestions?!

Peach Mango Smoothie and Sun Dried Tomato Egg Sandwich

This morning was a slow one. After being out late with a few friends for labor day, I woke up and grabbed for the coffee. As soon as I sat down at the computer to start going over some work emails, the phone calls and emails just never seemed to stop. Before I knew it, it was 9:30 and I hadn’t had breakfast or gotten ready to walk out the door. So breakfast was a quick and easy smoothie that Maggie had whipped up. Yummo.


1 Mango 1 Peach
8 Medium Ice Cubes 1 1/2 Cups Fat Free Greek Yogurt
1 Teaspoon Cinnamon 1 1/2 Tablespoons Sugar


1. Puree the mango and peach. Add in the remaining ingredients and blend. Top with granola.

BOOM! Delicious Mango, Peach Smoothie! Perfect way to start off the work day…well mid morning snack I guess.

When lunch finally rolled around, I was craving eggs. I was so surprised at how well it came out. I felt like it could have gone either way, but man did it satisfy! I wanted a second one after this was polished off!

On this sandwich there is:

1 Over Easy Egg 2 Table Spoons Sun Dried Tomato Hummus
1/4 Cup Sprouts 2 Tablespoons Fresh Chives
1 Honey Wheat English Muffin

Surprisingly, overwhelmingly good. I topped my meal off with 2 Whatever You Got Oatmeal Cookies from last night and went back to work.

Tonight I wen to the gym for a quick workout on the treadmill. I am not so much into long distances on the treadmill because I find them really boring and if I attempt to, chances are I’ll just quit half way through. So, tonight I did a 25 Minute Interval Workout.


Now for some tea, and TV!
