Peach Mango Smoothie and Sun Dried Tomato Egg Sandwich

This morning was a slow one. After being out late with a few friends for labor day, I woke up and grabbed for the coffee. As soon as I sat down at the computer to start going over some work emails, the phone calls and emails just never seemed to stop. Before I knew it, it was 9:30 and I hadn’t had breakfast or gotten ready to walk out the door. So breakfast was a quick and easy smoothie that Maggie had whipped up. Yummo.

Ingredients:

1 Mango 1 Peach
8 Medium Ice Cubes 1 1/2 Cups Fat Free Greek Yogurt
1 Teaspoon Cinnamon 1 1/2 Tablespoons Sugar

Directions:

1. Puree the mango and peach. Add in the remaining ingredients and blend. Top with granola.

BOOM! Delicious Mango, Peach Smoothie! Perfect way to start off the work day…well mid morning snack I guess.

When lunch finally rolled around, I was craving eggs. I was so surprised at how well it came out. I felt like it could have gone either way, but man did it satisfy! I wanted a second one after this was polished off!

On this sandwich there is:

1 Over Easy Egg 2 Table Spoons Sun Dried Tomato Hummus
1/4 Cup Sprouts 2 Tablespoons Fresh Chives
1 Honey Wheat English Muffin

Surprisingly, overwhelmingly good. I topped my meal off with 2 Whatever You Got Oatmeal Cookies from last night and went back to work.

Tonight I wen to the gym for a quick workout on the treadmill. I am not so much into long distances on the treadmill because I find them really boring and if I attempt to, chances are I’ll just quit half way through. So, tonight I did a 25 Minute Interval Workout.

 

Now for some tea, and TV!

Sun Dried Tomato and Cucumber Sandwich and Workout

This morning I woke up with a bit of a cold that was still lingering from the weekend. Even when I feel like I am starting to get sick, I go straight to brew myself some tea. This weekend I had gone to Teavana and grabbed some fresh tea leaves so that’s what ended up in my cup. I love that place because as soon as you walk in you feel like the options for tea are endless. The only thing that bothers me about the place is that you can’t take them all home!

After my tea I stumbled around the kitchen to find some waffles that had been in the freezer for a while. Just waiting to be comfort food for just this occasion. I am a big fan of the Van’s natural foods Waffles. They load these waffles with flaxseeds and natural wheats and they are friendly to just about every dietary restriction. No eggs, No Dairy, No Gluten….and yummy.

For the syrup I used Agave Nectar, just trying to stay on the healthy side again 🙂

When lunch came around, it was another veggie sandwich for me. I love them even though I feel like they sound so bland. Hummus is my go to as far as condiments go. You can get just about every flavor of them and they add so much to your sandwich. I just picked up this Sun-Dried Tomato Hummus the other day and have been slapping it on everything. They other one I picked up was a Spicey Red Pepper Hummus, and that has a hell of a kick.

For the sandwich…

Ingredients:

4 Slices of Cucumber 1 Slice of Whole Wheat Bread
1/4 Cup Sprouts 2 Tablespoons Sun Dried Tomato Hummus

Tonight I headed to the gym to do an Elliptical Workout and my Shoulder Toning Circuit. I am going to try to start adding a link to some great little workouts that I do to stay in shape 🙂

Grilled Chicken Flatbread Pizza

Today was one of those days…so quick and easy dinner it was. I took some left over grilled chicken form the fridge and chopped it up into smaller, bite sized pieces and threw it together to make this little delight. 🙂

It took less than five minutes if you can believe that…So no excuses! Eat Healthy!

Ingredients:

1 Flatbread/ Wrap 1/2 Grilled Chicken Breast

2 Large Basil Leaves Chopped 1/2 Cup Mozzarella Cheese

Red Pepper Spice to Taste 1/4 Cup Sun Dried Tomatoes in OIl

Salt and Pepper to taste

Directions:

1. Add Grilled Chicken, basil leaves, mozzarella cheese, sun dried tomatoes (drain from oil) and red pepper on top of your flat bread.

2. Heat up a griddle to medium heat and heat up your flat bread. Be careful to not burn it!

3. When the cheese has melted, IT IS DONE! Take it off the griddle and top with some salt and pepper. Enjoy!

It is as easy as that! I just threw on the TV and watched some reruns of America’s Next Top Model, because I’m in love with that show…and chowed down on some pizza.

I had found this flatbread at Publix and it is really thin. It is only 90 calories and they have a ton of different flavors for them. This one was an Italian seasoned flat bread, but there are also sun tomatoes, whole wheat, multigrain and a whole bunch of others. The selling point on these is the fact that they are only 90 calories! I have used them for wraps as well and they are delicious.

The other option for this is pita bread. They are a bit thicker and can make more of a crust but can be just as healthy. They obviously can be used in sandwiches as well. For a Print Friendly version, click this…Grilled Chicken Flat Bread.docx

The plan for tonight…some red wine and doing my nails because as everyone can tell…they need doing.

Cucumber Sandwich

It is a BEAUTIFUL Sunday in Orlando. This morning I took the pups to the dog park for about 2 hours to tire them out. And they are DEAD. We show up and Bacon takes OFF for the lake. By the time we get down there he has 2 tennis balls shoved in in his mouth and was trying to gob back a third. It’s actually an amazing fest, especially when we didn’t show up with any.

Oreo spent her time chasing a Mastiff, German Shepard and a 9 month old grey hound. Yes, Oreo is the 20 pound cocker spaniel. What can she say, she likes the big guys.

With the puppies spent,

I went to making myself a refreshing lunch. I had just gotten some pumpernickel bread, and I wanted to make something delicious with that, and this is what ended up happening. Nothing crazy, but boy does it hit the spot.

Ingredients:

1 slice Pumpernickel Bread, Toasted                         1/2 Cucumber

2 Tablespoon Light, Whipped Cream Cheese         Salt and Pepper to Taste

Directions:

1. Peel and chop the cucumber into slices.


2. Smear cream cheese onto the toasted bread. Top with slices of cucumber. Sprinkle salt and pepper on top to taste (very little is actually needed).

 

And ENJOY! I wasn’t starving so I just ate it open faced. But definitely top it off with another slice of bread. This was a perfect little lunch after sitting outside all morning with the pups.
