The Not Too Sweet Pumpkin Bread

Happy Friday!

This chilly fall morning started with Brent and I jumping up and running to Cumberland Farms for our FREE COFFEE FRIDAY! Normally I run in to grab some water, gatorade, energy bars or every once in a while some ice cream. If I want coffee, it’s Dunkies or Starbucks for this girl. But who can deny a free coffee?? So, head to Cumberland Farms this morning for your free coffee 🙂

Anyways, this past weekend Brent and I headed to Nashville to hang out with some friends and just see the city. It just may be my favorite city I have ever been to. We had a SUPER early flight back to Boston and we were back home by 2. Which gave us just enough time to prepare for some people coming over for the Patriots game. While Brent headed to the game with them, I decided to make some pumpkin bread and sweet potato biscuits for breakfast the next morning. It was an easy way to have something for everyone to eat without making much of a fuss.

Fall Pumpkin Bread

Ingredients

1 Can Pumpkin Puree 2 Eggs
1/2 Cup Canola Oil 1 Teaspoon Vanilla Extract
1/2 Cup Light Brown Sugar 2 1/4 Cup Flour
1/2 Cup Water 3/4 Cup Sugar
2 Teaspoons Baking Powder 1.2 Teaspoon Salt
1 1/2 Teaspoon Pumpkin Pie Spice

Directions

1. Preheat the oven to 350 degrees. In a mixer, whisk the pumpkin puree, canola oil, light brown sugar, water, eggs, and vanilla.

2. In a separate bowl, stir the flour, sugar, baking powder, pumpkin pie spice, and salt.

3. Add the dry mix to the wet and stir until well blended. Pour the batter into a greased bread pan. Bake for 60-70 minutes or until a tooth pick comes out clean.

The bread is definitely not sweet and has a strong natural pumpkin flavor, which I love. It allows the pumpkin puree to take over the bread, as opposed to sweetness and spices. It was delicious.

I also made, or attempted to make, sweet potato biscuits. I had gotten this cute mix in a mason jar from a wedding that Brent and I were in a little while ago. I think my definition of a large sweet potato was VERY different than their idea of large. Because my biscuits turned out to be more like a moist cake texture. I don’t think I have ever made anything quite like this before.

It was definitely delicious and I can see how the biscuit version of this would be irresistible.

This weekend I’m working on some fall inspired coffees that you can make at home. I love making “fancy” coffees on the weekend and have some ideas on pumpkin spice coffees.

The bread was definitely a win. It made breakfast super easy, especially when we all got up at 5AM for work!

Banana Pancakes Minus the Flour

Every time I hear this it just makes me crave those slow weekend mornings that you just relax, sip your coffee, and eat those banana pancakes. It sounds like such a perfect little morning.

Well, last week there was a LARGE thunderstorm that came through the Boston area in the morning and it seemed to be begging just that banana pancake morning. You don’t have to ask me twice!

I decided to try out a little variation some banana protein pancakes that I found earlier in the week. The BEST thing about these pancakes is they have NO FLOUR and you really don’t miss it.

Flourless Banana Pancakes

Ingredients:

1/2 Cup Old Fashioned Oats 1/2 Banana
1/4 Cup Non-Fat Cottage Cheese 1 Egg
1/2 Teaspoon Cinnamon

Directions:

1. Place all of the ingredients in a a bowl and blend with an immersion blender. You want the batter to be completely smooth.

2. Heat up a skillet to low-medium heat and place the batter on the skillet. This will make about 2 medium sized pancakes. Flip the pancake when it starts to bubble and the edges look cooked. These will cook faster than normal pancakes so keep the temperature low.

I topped mine with the other half of the banana and some agave. It was delicious and I don’t know that I would go back to putting flour in my pancakes. To be honest, these fill you up but don’t sit as heavy as normal pancakes. A winner!!

This leaves me with so many other ideas for a ‘healthy’ pancake that doesn’t include any flour.

Chewy, Chocolate Chip Cookies

Everyone needs that chocolate chip cookie that reminds them of their childhood. These cookies aren’t unbelievably sweet, they are chewy and filling so you don’t really have to worry about getting your hand stuck in the cookie jar too many times in a day.

But just in case, check out this nifty kitchen tool to help with portion control when you just want 1 more chocolate chip cookie:

It’s called…The Kitchen Safe. And it is exactly what you are thinking. You set a timer on the top of the jar, say 24 hours, and once you open the jar to grab a cookie or two and put it down, the jar will seal itself for 24 hours before allowing your grubby little fingers to grab at another cookie.

No doubt, you can outsmart it, but really?! It’s one way to stop the munching.

Now for the cookies…YUM.

Chocolate Chip Cookies

Ingredients:

1 Cup Softened Butter 1 Teaspoon Baking Soda
1 Cup White Sugar 2 Teaspoons Hot Water
1 Cup Ligth Brown Sugar 1/2 Teaspoon Salt
2 Eggs 3 Cups All Purpose Flour
2 Teaspoons Vanilla Extract 2 Cups Semisweet Chocolate Chips

Directions:

1. In a mixer, mix the butter, white sugar and brown sugar until smooth. Then add the eggs one at a time, followed by the vanilla.

2. In a small glass, heat up water and dissolve the baking soda. Then add to the mixer and blend. Stir in the salt, flour and chocolate chips next.

3. Place on a ungreased, nonstick cookie sheet and bake at 350 degrees for about 10 minutes, or until the cookies are slightly browned. The cookies will spread, so place them about 2.5 inches apart.

And boom…delicious chocolate chip cookies. This batch made about 4 dozen cookies, which should last a while 🙂

The batter would also be great to mix up the ingredients with, substituting the chocolate chips.

Rice Cakes, Boring to YUM!

Now I don’t want to take credit for this idea because it wasn’t me. Kaela introduced me to the idea of using a rice cake as almost an open faced sandwich instead of trying to choke down a dry, lightly salted rice cake. Let’s get real, if you eat them, you probably need a large glass of water to go with it. OR you are enjoying the caramel apple or some other sugary version of it.

Rice Cakes

They are delicious. Before the half marathon, Kaela pulled this snack out and it was perfect before our run.

It doesn’t really photograph well, but the sharpness of the cranberries goes really well with the rice cake and the cream cheese.

I made this in my kitchen, and while I was placing the cranberries on it my sister, my mom and Brent all became curious. My sister loved it and Brent was pleasantly surprised. He’s the sceptic when I’m trying new things out and he actually liked it. 🙂

From there, bananas made it onto the cream cheese and it was topped off with a blueberry jam that is made with fresh wild blueberries from maine. It’s not a sweet jam at all. But the snack is extremely moist and filling.

And for something a bit sweeter, try taking the Apple Rice Cakes and top it off with peanut butter and sliced bananas. Brent’s response to this one, “You did good things.”

I have to say, there will definitely be more experimenting when it comes to this snack. It is healthy, low calorie, low carb snack that I don’t feel guilty eating. And there are so many options when it comes to adding things on top that I don’t think it could get boring.

With the fall upon us, I am looking forward to trying a PUMPKIN flavored rice cake! Apples might be something to try on it as well. Raisins??

Welcome to the Long Weekend!

I have been DYING for a long weekend just to NOT think about work. Since I started my new job I haven’t had a day off and I really just wanted a few days to put the work and the emails aside to do whatever I felt like.

For Memorial Day weekend, I headed down to Cape Cod to stay at my parents house. I actually drove down on Thursday night and went to a few meetings on Friday to avoid traffic. Yesterday, I woke up around 7 and headed outside to let Oreo and Bacon do their thing when I spotted THIS guy hanging around the street.

HOW COOL IS HE?! I have seen a few turtles before, but this was by far the largest that I have seen just out for a stroll. Bacon ran over to it clearly thinking it was a rock. But upon further investigation, ie sniffing, he discovered it was alive. He jumped backwards three feet and just glared at it in curiosity. Oreo…still thought it was a rock. Besides the large turtle roaming around, they had a fantastic time chasing the rabbits that were trying get in a morning breakfast of clovers.

For breakfast, I whipped up an egg sandwich deal on a pumpernickel bagel. I’m trying to cut back a bit on the amount of bread that I’m eating because I recently realized that all I eat is really carbs and carbs. So, I toasted up half a bagel, cooked 2 eggs over hard, seasoned them with some cajun seasoning and melted a half a slice of cheese on both. With the pan still hot, I chopped up two small tomatoes and warmed them up with bits of turkey. Threw the tomatoes and turkey on top and BAM! Yummy!

After eating and relaxing a bit more. We headed out to check out some of the consignment shops that are in the area. I had heard that they were actually quite good and you can find some pretty unique things at very low prices. I was actually really surprised how many there were once you started looking…and the size on them! You could really find anything you wanted at these shops and pay much less than going to retail stores. I was particularly interested in some of the furniture.

After poking around for a little while, we came across this candy shop, Candy Co in Yarmouth, that I had heard has just about every type of candy you can think of…even some that you can’t seem to find anymore. That sold me. And…they really did have just about everything you could like of. This was only HALF the wall:

Penny Candy, PEEPS! Irish chocolate and sweets. My family and I had gone to Ireland a long time ago and I remember LOVING these candy:

They had a whole wall of Jelly Bellies that you could just pick out the flavors that you wanted. Such a great idea. We had so much fun just walking about and taking notice of some of the oldies but goodies that you just don’t see anymore. My favorite throw back were the Fruit Strip Gum.

The gum was good…it lost it’s flavor fairly quickly but the best part were the tattoos that you could put on your tongue! Who remembers that?!

I ended up walking out with some chocolate covered espresso beans and enjoyed a few on the ride home. They are one of my favorite treats.

After a day of walking around town, Brent and I headed to DJs Pub, which I had heard had FANTASTIC wings that you just had to try. Who can resist. We got there at the start of the second period of the Bruins game last night…and that was a poor choice. We waited for a while in the doorway with a few other people. And after around 20 minutes of waiting, a table for 6 cleared. With several groups of twos waiting, we decided to sit down with another couple.

Immediately, the PEANUT BUTTER AND JELLY WINGS jumped off the menu at me. Now, that WAS my favorite sandwich when I was little, but I don’t know about putting that combo on a wing. So…we had to try it.

Yes. That is peanut butter and jelly smothering those wings. And I have to say…it was different but really good! The peanut butter had a little spice to it, which really made the flavor. We tried the buffalo as well, but they weren’t as notable as the PB and J. Next time, perhaps a garlic?!
