Whole Wheat, Light and Fluffy Pancakes and Some X-Mas Cards

This whole weekend, I’ve been getting over the flu. I spent it catching up on some TV and some movies and sleeping. I was absolutely dying. I hate being sick. And I’ve still got the sniffles.

Anyways, I am on a mission to start using up some of the baking, pasta and canned goods in my house. I never really realized how much of it I have until I’ve started to attempt to put a dent in it. It’s madness. I could honestly eat for weeks just based upon my non-perishable items.

For breakfast, I decided to make some Whole Wheat Pancakes that turned out to be really light and fluffy. They were extremely good, and not as dense as I normally picture those whole wheat items.

Whole Wheat Pancakes


1 Cup Whole Wheat Flour 2 Tablespoon Dark Brown Sugar
2/3 Cup All Purpose Flour 5 Tablespoons Butter
1/3 Cup Ground Flaxseed 1 1/2 Cup Vanilla Almond Milk
1 1/2 Tsp Baking Powder 2 Eggs


1. Mix all of the dry ingredients in a large bowl.


2. Soften and cut up the butter. Add it to the mix using a fork and mix it in until the batter is a sand like texture. Then mix in the almond milk and eggs.

3. Heat up the skillet to a medium heat and add your batter. When the batter bubbles, flip the pancake over.


For the last few pancakes, I added some chocolate chips just to spice things up a bit. It made me wish they were all smothered in chocolate chips.


I like adding things like the flaxseed to the pancakes because it adds a bit more protein to the pancake. Something that you never really see in a pancake unless you add some protein powder.

For the topping, I took some frozen blueberries and some frozen blackberries and heated them up. Then mashed them a bit to get the juices out.


I love these berry toppings and this was one of my favorites. I don’t end up using NEARLy as much syrup as if I were just depending on the syrup. I usually just sprinkle it over the berries and that does it.



Last night I started to put a little tiny dent in christmas wrapping and my X-Mas cards. I wasn’t really in a crazy creative mood, so I think they turned out a little less stellar than I wanted them to…but they will do.




But they are going to work for now. I can already tell, that even though I don’t have too much on the books for this week, it’s going to be killer.

Crafty Weekend

This weekend I caught up on some much over due paperwork and took it easy. When it came to Sunday, I was trolling around on Pinterest and came across a whole bunch of Holiday Cards. It really inspired me to get moving on making some Thanksgiving cards for my friends and family. Many of my close friends and my entire family live in the Northeast, a solid 1300 miles away from me. This was just my way of keeping in touch and spending a bit of time on each of them.

I swung by Michael’s and picked up some card stock, which was conveniently on sale for 6 bucks for 50, ANNNNDD I had a 25% off coupon. Score. I also picked up some embellishments, and decorative card stock. I went to town. You wouldn’t believe the things that you can find there. I was walking around in amazement at all the different ways that you can decorate a card. Needless to say, I went nuts.


I was really just figuring it out as I went. I started off pretty simple with these two:



Then found that splitting the space in half added a different flavor to it:



Then I tried to get a bit more creative by adding some different elements like tons and tons of individual leaves. Yes, they are individually cut out and put on there 🙂



After these few were put together, I was starting to accumulate a bunch of little scraps from the ends of other pieces or ideas that I had just rejected. I started to put these together on a card and actually really started to like how it was coming out. These may be my favorite ones of the afternoon:




My little creative juices started flowing a bit more towards the end and I got the idea of weaving the papers together. Once I had added about 3 of them together, they actually held together without any glue. It made it really easy to glue the whole thing onto the card.


And the last one, was just a clean and simple card.


I had so much fun putting these together, and I can’t wait for christmas to come around to make another batch. I’ve got some FANTASTIC ideas for that. Think about all of the options!! Santa, elves, snowflakes, reindeer, the north pole, presents! The list just goes on and on!


This morning I woke up early and headed out for a walk with Oreo to Starbucks. I’m such a big fan of this walk because Oreo gets her morning exercise in and I get my coffee. I’m also slightly obsessed with the new Starbucks App that allows you to pay with your phone. Coolest thing ever.

I opted for the Mocha Latte and a Peach Raspberry Parfait. The flavor combo is amazing.


The only thing that’s not so great about this walk is that I have to speak with people before I have my coffee. The guy behind the counter was asking me simple questions like, “How was your weekend??” And I REALLY struggled to answer it. It was like I was surprised the guy was asking me such a thing.

Oreo got her workout in and is officially tired. Perfect way to save my shoes from being inhaled while I’m at work.
