Peanut Butter, Banana Puppy Cupcakes

It’s no surprise that I spoil our dogs. Brent blames me for Bacon being spoiled, which is probably true. 🙂

I’ve been watching re-runs of DC Cupcake and it really got me in the mood to make something fun for the dogs. I’ve been thinking about making some treats for the and all I needed was the inspiration to make some cupcakes to help make the decision easy.

I knew the basic ingredients I wanted to put in them, and just kind of wen from there. The doggies seemed to really like them…and people did too!

Peanut Butter Pupcakes

 

Ingredients:

2 Whole Ripe Bananas 1/2 Cup Applesauce
1/4 Cup Peanut Butter 2 Cups Wheat Flour
1 Teaspoon Baking Soda 1/2 Cup Canola Oil

Icing

2 Whole Ripe Bananas 1/2 Cup Peanut Butter

Directions:

1. Preheat the oven to 350 degrees. First, mix the canola oil and applesauce. Then add in the peanut butter until it is smooth. Last, add in the flour and baking soda.

2. In a separate bowl, mash up the bananas and then add them into the batter. Pour the batter into mini muffin tins with paper liners. Cook them for 15 minutes.

Icing

1. Mash the banana until they are as smooth as possible. Then add in the peanut butter and mix. This will determine the thickness of the icing.

2. When the pupcakes are cooled, top them off with the icing and let the little nuggets enjoy!

The little spoiled doggies loved their little treats and I didn’t feel bad giving it to them because I know EXACTLY what’s in them. And it didn’t include any ingredients that I wouldn’t feel comfortable giving them any day of the week.

A few people tried them too…and they weren’t bad at all. Think banana bread without the sugar topping. They were delicious.

When I’m going out to the store and just want to pick up some treats to have in the cabinet, I love the Trader Joe’s Dog Treats. Simply because when you read the label, you know every ingredient. If you wouldn’t eat it, why would you feed it to them??

I’ve tasted the Trader Joe’s treats…and they are quite bland. Tastes like food…but bland. I don’t need to worry about anyone eating those 🙂

Feeding the Sweet Tooth

On Saturday night, I met up with some friends from my previous company that I hadn’t been able to see in a crazy long time. One of them is in the book club and actually has a blog of her own, Dresses and Desserts. She just made these flower girl dresses that are adorable!

Anyways, I wanted to bring something with me for dessert and decided on some brownies. I wanted to take a turn at making some healthier brownies, and ended up combining ideas from a few recipes to build this one. It tasted fantastic, and was definitely lower in calories and fat than any other brownies I have made.

Double Chocolate Brownies

 

Ingredients:

3/4 Cup Semi-Sweet Chocolate Chips 2 Tablespoons butter
1 Cup Whole Wheat Pastry Flour 1/4 Cup Unsweetened Cocoa Powder
1/4 Teaspoon Salt 3/4 Cup Egg Whites
3 Eggs 1 1/3 Cup Light Brown Sugar
3/4 Cup Unsweetened Applesauce 2 Tablespoons Canola Oil
1 Teaspoon Vanilla 1/2 Cup Chocolate Chips
1 Tablespoon Milk

Directions:

1. In a microwave safe bowl, add the butter and 3/4 Cups Chocolate chips. microwave until melted and blended at 30 second intervals. Stir in milk to make smooth.

2. Stir the flour, cocoa and salt in a bowl.

3. With a mixer, mix the eggs, egg whites and sugar. Then add in the applesauce, oil and vanilla.

4. Blend in the chocolate-butter mix. And then gradually add in the dry flour mix. Blend until mixed well. Lastly, add in the last chocolate chips.

5. Pour the batter into a 13×9 dish that is greased. Bake it at 350 degrees for 25 minutes or until the center is cooked throughout. Use the toothpick method.

They definitely tasted healthier than your typical brownie but lost no real chocolate flavor. They didn’t last long at all.

While the brownies were in the oven, Bacon and Oreo had gotten into a tug of war with a cute little pink bear…and the bear lost.

Normally this isn’t a notable occurrence, but it just looked so devastated on the floor haha.

After brownie baking, I ran over to the gym to get a quick workout in and this message was up on the board as a little motivational point…and I have to say…it worked.

New Year’s 2013, Egg Nog Pancake Style

New Year’s came and went. I was still getting over my cold, or maybe it was still creeping up on me as we were heading out to Boston Emerald Lounge. I sucked down some dayquil and headed out to meet a whole bunch of my friends that I hadn’t seen in YEARS. Literally. So. Much. Fun.

On New Year’s Day, I popped up and made some festive pancakes for the family. Egg Nog Pancakes. They were unbelievably light and fluffy.

Egg Nog Pancakes

Ingredients:

1 Egg 3/4 Cup Vanilla Yogurt
1/3 Cup Egg Nog 1 Cup Flour
2 Tsp Baking Powder 1/2 Tsp Baking Soda
1 Tablespoon Water

Directions:

1. Beat the egg. Then add in the Vanilla Yogurt, and Egg Nog.

2. In a separate bowl, combine the flour, baking soda and baking powder. Then add it into the wet mix. Add in the water as well.

3. Preheat the skillet to a medium heat. Wait for the pancake to bubble slightly and flip it over. It should rise a bunch.

For the topping, instead of the normal berry topping that I whip up, I took some chunky applesauce and heated it up a bit. That was the topping for this guy. It was good without the syrup, but also fantastic with it.

The applesauce topping was fantastic. Bacon had his serious begging face on.

Bacon apparently had a fun night of partying too, because the two of us crashed on the couch shortly after pancakes.

I feel like that’s what just about everyone was doing. Just watching football and recovering.

Tomorrow, I’ve got a packed day of wedding venue appointments and some solid gym time to get to. Exciting!!
