3 Ingredient Peach Cake Smoothie

Do you ever have those days where you just can’t seem to focus?? I got up this morning with the intention of going out on a quick run to start off the day. But, the chill in the air made me lay in bed for a while looking at pinterest. Pinterest is my favorite way to wind down the day and to start my  day. It allows me to just chill and scroll through things mindlessly, while feeling like I’m actually doing something…even though I’m most definitely not. 🙂

After a bit of scrolling, I jumped in the shower, made some coffee and watched a bit of Burn Notice. They had a great little marathon going this morning. When the coffee started to kick in, everything on my TO-DO list for the day started running through my head and that finally got me up and running. I answered some emails, finished getting ready and ran out the door like a mad woman, smoothie in hand. It’s amazing how coffee can get you from being lazy to running frantically so quickly. The smoothie ended up being amazing even though it was thrown together quickly and only has 3 ingredients! The best kind of breakfast!


1 Cup Frozen Peaches 1 Scoop Cake Batter Protein Powder
1 Cup Almond Milk

Put it all in a blender and call it breakfast! If I were thinking correctly I would have connected Cold Weather + Cold Smoothie = NO FUN. But! Problem solved  when you crank the heat in your car. Just don’t mention the fact that it was only 62 degrees and I’m complaining about it being cold…my father would disown me.

Now at work, with loads to do, and little focus. I’m trying to find a way to get back on the right track. Normally, coffee is the answer. Done that already today…now I’m up for Plan B.

Any suggestions?!

Blueberry Cake Protein Shake and A Winter Park Boat Tour

This morning I actually got up and went for a run. It started off a bit rough, but ended strong. Not such a bad run and it felt good to get it out of the way.

When I got back, I mixed up this UNBELIEVABLE master piece. It tasted like Blueberry Cake. Legit. I couldn’t get enough of it.


1 Frozen Banana 1 Cup Frozen Blueberries
1 Scoop Cake Batter Protein Powder 1/2 Tablespoon Cocoa Powder
3/4 Cup Vanilla Almond Milk

That simple. Just put it in a blender and blend until smooth. I am beginning to absolutely love this cake batter protein powder because I feel like the options are endless with it. You can really turn anything into a sweet cake flavored treat and mold it into what ever kind of cake flavor tickles your fancy.

Anyways, the rest of the day was just work work work. When I got back, Brent and I went on a fun little tour! Not too crazy or anything but entertaining. It was the Winter Park Boat Tour. It leaves just about 2 blocks away from my house and is 12 bucks a person. You just ride a cute little boat around the lakes in Winter Park and learn all about the history of the area.

To be honest, being from Boston, I didn’t think that Orlando had such a rich little history, but it turns out Winter Park is more influenced by the north than I thought!

We run past these little canals connecting the lakes and it’s really just so pretty.

Some of the little interesting facts about Winter Park:

  • A whole bunch of land was purchased by a man who lived in New England. He named it Winter Park in hopes of drawing more northerners to the area for the summers.
  • A few years later, the northerners in the area decided they needed to build a school and Mr Rollins donated 50,000 dollars of the 100,000 needed to start the school, and it was named Rollins College.
  • Mr Cornell was actually a huge contributor to the school and has several buildings named after him. This is the same Cornell that start Cornell University in upstate NY.
  • Rollins is the only university in Florida to have a Noble Prize winner alumni.

My favorite fact of the ENTIRE ride centered around this house:

This was the first Mr Roger’s Neighborhood! THE MR ROGERS attended Rollins college and was assigned a dorm. But he couldn’t fit his grand piano in the room so his parent found a room in this house for him to rent out. Definitely room for his piano in here.

I LOVED Mr Rogers as a kid! I always think of my brother when I think of that show. It was definitely a fav of his too.

Blueberry Mango Smoothie and Surprise Date Night Dinner!

So I’m a little behind on my posts, but I have a VERY good reason why, which you will find out at the end of the post 🙂

Yesterday, I ran out of the house in a hurry to get to the office out in Melbourne. My extremely long drive that I am really happy has an end at some point. Another quick breakfast to make, and that is also very easy on the go, is obviously a smoothie. I had bought some frozen mangos a little while ago and felt like this would be a great time to use them. It was really simple as far as smoothie go, but really filled me up for the day.


1/2 Cup Frozen Mango 1/2 Cup Frozen Blueberry
1/2 Cup Almond Milk 1 Tablespoon Agave Nectar

When it came time for lunch, in the office that never eats lunch…I was ill prepared once again and just munched on a few snacks that were lying around. Seriously, I was dying and that will be the last time that this EVER happens. It’s not only really terrible for you, but by the end of the day I could turn into this little monster that could really eat a chair if I was given the opportunity.

In Florida, we are coming to the end of our rainy season, Thank Heavens! But, yesterday was no exception, we got a lovely rain storm for my drive home. I ended up stopping at a gas station to fill up and wandered inside for a quick bite to eat…I was starving. The one thing that really bothers me about gas stations is that there really aren’t many okay options to pick (not that you go to gas stations for a healthy bite to eat). Beef Jerky was always one of my go tos because it is lean. low calorie and high in protein. You really can’t ask for a better snack. Not eating meat, I settled on some baked lays.

When I got home, I was greeted with this:

And just to set the scene, from the back room Brent had “That’s Amore” blasting. I’m not much of a sappy, lovey dovey kind of girl and he said that was the best he could think of without it making me uncomfortable haha. It was perfect!

Brent made a salad with tomatoes and a sun dried tomato dressing. Yumm. And for dinner, it was the classic pasta with red sauce.

On the side, he made some garlic bread as well.

The basil on the bread was actually a very nice touch. It was really a get surprise and a yummy dinner.

We probably skimmed the top of the pasta bowl when we were both full. I laughed at how much pasta was left over and Brent said “Oh no…there’s more in the kitchen.” The man made the whole box of pasta. A POUND of pasta. I absolutely died.

This isn’t the first time that I have heard of a guy cooking a pound of pasta when it’s dinner for two and I am sure everyone out there has a FANTASTIC story of their own on this subject.

Overall, the dinner was amazing. I absolutely loved it and he completely surprised me, which is obviously the best part. For the rest of the night, we sat on the couch and watched some movies while drinking wine. Needless to say, the run I had planned didn’t get accomplished, nor did the post that I was planning on doing. But this was MUCH better!

I squeezed in my 3.6 mile run this morning and it was brutal. I was exhausted. It was probably the slowest I have ever run in my life. It really made me think about how different training on a treadmill and on street runs really is, even considering the flat Florida roads. Absolutely noted. I have a 4 mile run scheduled for saturday, which I have done in the past, but this just puts things back into perspective for me.

Paleo Oatmeal and an Interval Workout

This morning I woke up and ran off to the gym to do my 3 mile run as scheduled. Upon walking through the kitchen, I noticed my bananas had literally peeled themselves. Bananas for breakfast it is!

Haha! How funny is that?! I laughed out loud when I saw that. Before I gave into my bananas, I went off to the gym.

Per the usual, I hate running on treadmills for a long period of time, I came up with another interval workout. This time, with distance and speed as opposed to a timed workout. So here’s what happened this morning:

I’d be lying if I said I didn’t jump off a time or two towards the end for a real quick breather. This run really had me going, and I am still recovering from it.

And then, we were back to the self peeling bananas. I was trying to come up with a unique way to cook up these bananas, because clearly, these were not normal bananas. I found a recipe on several blogs for Paleo Oatmeal, which is really an oatmeal without the oats! Say what? I ended up choosing this recipe from OnaPinkTypewriter.com. The recipe was changed up just a bit from what she originally did, but follows the same guidelines.

Looks just like real oatmeal doesn’t it?!


2 Eggs 1/2 Cup Almond Milk
2 Tablespoons Ground Flaxseeds 1 Teaspoon Cinnamon
1 Banana, mashed 1/2 Teaspoon Vanilla


1. Whisk together the eggs, and almond milk in a small bowl. Then stir in the banana, flaxseed, vanilla and cinnamon. Make sure the banana is smooth in the mixture.

2. In a small saucepan, heat up the mixture for about five minutes until you get the texture that you prefer. Just make sure you don’t leave it too liquid because there are eggs in there!

And Finito! Just put it into a bowl and top it off with anything that you like. I added more banana, because I had two self peeling bananas! and some more cinnamon. I could definitely see sliced almonds working well in this as well.

The texture is a bit different than anything else. It’s very fluffy. Add some granola or anything else crunchy if the texture gets to you a bit.

For lunch, I made some pasta because I was again, starving! SImple, Easy, Delicious.


1 Serving Whole Wheat Penne 1/4 Cup Tomato
3 Chopped Basil Leaves 1/4 Cup Red Pepper
Tablespoon Fresh Paremsan Cheese 2 Tablespoon Catalina Dressing
2 Tablespoon Fresh Chives

No directions needed, just cook up the pasta and throw the rest on top! So easy! It was really light and filling at the same time. Just to give you an idea of HOW MANY VEGGIES I PUT IN THIS THING…

OH yea, I went nuts.

Brent had asked me to bring him by some lunch as well. But he didn’t want any of this “healthy” stuff. He wanted something SPICY! So I made him a quick, spicy pasta.


1/4 Cup Garlic and Onion Ragu 2 Tablespoon Hot Sauce
1/4 Cup Jalapenos 1/4 Cup Fontina Cheese

Really, nothing crazy at all, but much healthier than the Mac N Cheese covered in hot sauce that he wanted! Just adding the hot sauce to something that was already fully flavored and could handle a little spice made this pasta just that much better. Don’t be afraid to take those pre-made pasta sauces and turn them into something unique. Think of them as a starting point instead of the main attraction.
