Paleo, Vegan, Gluten Free Brownie Bites

It sounds fakeโ€ฆor super dry and lacking of taste when you put it that way. But I have been seeing dessert recipes online that are based around dates for a while now and when I was at the grocery store a little while ago I decided to pick some up for when i became bored enough to try something new.

There are TONS of variations on this everywhere and I just decided to use which ever nuts I had on hand and since I didn’t have any coconut flakes, those didn’t make it in there either. But the REALLY taste like brownie bites! This is a perfect little recipe to have just a few morsels in the refrigerator for when you are craving something filled with chocolate.

Chocolate Brownie Bites

Ingredients:

1 Cup Sliced Almonds 1/2 Cup Chopped Walnuts
Pinch of Salt 1 Teaspoon Vanilla
1 Cup Pitted Dates 1/3 Cup Cocoa Powder, Unsweetened

Directions:

1. In a blender, blend the walnuts and almonds until they are fine. Then add in the pinch of salt, vanilla, dates and cocoa powder. After blending for 30 seconds, add in a tablespoon of water to get everything to stick together.

2. Scoop out about a tablespoon of the mix and roll them into a ball in your hands. Refrigerate until you are ready to eat them!

They are so easy to make and definitely taste better when they are cold. All they have in them is fruit and nuts! You can’t go wrong!

Cauliflower and Herbed Barley Salad

This week Mama C was cooking up some dinner for the family and she was working on this cauliflower dish. She called me and Maggie over to give it a try because she wasn’t sure about how it tasted. As soon as Maggie and dove a finger into, we were hooked. This dish is filled with a strong lemon and garlic flavor that really took the cauliflower to another level. We couldn’t get enough of it.

So, Mama C has allowed me to share this amazing recipe with all of you ๐Ÿ™‚ I’m telling you, you won’t be disappointed. She has somehow found a way to take cauliflower and make us WANT to eat it. Crazy.

Cauliflower and Barley Salad

Ingredients:

3/4 Cup Quick Cooking Barley Salt
1 Tablespoon finely grated lemon zest 3 Tablespoon Lemon Juice
1 Tablespoon Mayonnaise 1 Teaspoon Dijon mustard
4 Tablespoons Olive Oil Black Pepper
1 Head Cauliflower 1 15oz Can Small White Beans
1/2 Cup Parsley Leaves 1 Clove Garlic

Directions:

1. Start cooking the barley in a large saucepan, according to the directions on the package. Once it is cooked, drain it and set it aside.

2. Whisk the lemon juice, mayonnaise, mustard, 3 Tablespoons of Olive oil. Finely grate the garlic clove and whisk it into the dressing as well. Finally season it with salt and pepper to taste.

3. In a large skillet, heat up apprx. 1 Tablespoon of olive oil over medium high heat. Add in the cauliflower and occasionally stir it until it begins to brown in spots. It should take about 10 minutes.

4. Add in 2 tablespoons of water, then cover it and allow it to cook for 2 minutes longer, or until they are tender. Season them with salt and pepper to taste.

5. In a large bowl, add in the dressing, then add in the cauliflower, barley, beans (washed under cool water) and parsley. Toss it to coat everything and top it with the zest of lemon.

I can’t tell you how delicious this is. We had it as a side dish, but you could definitely have this as a main dish and even top it off with some sort of meat. You can also substitute the barley for quinoa or any other grains. The dressing is really simple and could compliment just about any grain.

Snowing Again!

This weekend we were hit with another storm, which was actually originally going to get up to 13 inches. But the temperature rose just enough last night to turn it into rain, and really reducing the amount of snow…and just making everything slushy.

However, that didn’t stop Bacon and Oreo from heading outside to get a spot of exercise. They have been kind of cooped up and Bacon has been staring at us begging to let him out. Colleen ended up taking the two of them out in the snow and throwing a ball around. You couldn’t have pictured any happier dogs.

If you couldn’t tell, Oreo is back to her old self. We are trying to keep her from jumping around too much, but she doesn’t really have any interest in doing so. I took her to the vet on Friday and they came to the conclusion that it wasn’t took bad of a herniated disk because she did recover so quickly.

Hopefully the snow isn’t took bad for my flight tomorrow ๐Ÿ™‚

Puppy Treats and Sparkling Jello

As a part of my baking expedition, I finally pulled out a do it yourself cookie treat kit that I had found at Petsmartย on sale forย 1 Dollar. It was a must buy. I have been wanting make my own puppy treats for a while and the only ones that I had really made where the pupsicles a few months ago. The dogs really loved them, but they weren’t really appropriate for the middle of Nemo.ย 

Anyways, I started mixing them up and all that is really in the batter is Whole Wheat Flour, Rolled Oats, Baking soda, Salt, Peanut Meal, Cornmeal and Powdered Eggs. Then you add in water and canola oil. Really simple and really easy to duplicate. I haven’t attempted to duplicate this yet, but you better believe it’s going to happen. And when it does…there will be different flavors ๐Ÿ™‚

I cut them into these cute little doggie bones in hopes that people wouldn’t think that I was making them some oatmeal cookies or something. BUT..that didn’t stop Brent from taking a little bite out of them. He said they tasted like Nerd Cookies….which is what we call Bridget’s Gluten Free Cookies. If you couldn’t tell, we haven’t really found an option for Bridget that doesn’t taste all dried out.

When that finished up, I started on a little project for the peoples.ย Sparkling Jello.ย Initially, I was looking for some club soda to make this and Maggie was cleaning up the house. We called my sister Colleen who was at the grocery store with my dad picking up the groceries for the week, and asked for some club soda and Maggie needed paper towels.

When my dad walked in the door, he asked “Do I even want to know what the dogs did to the carpet?!” Say What?!

In translation from Colleen to my dad, she included…club soda and paper towels and there’s something on the carpet. Allowing for a small freak out the whole drive home for them.

NOPE, just yummy Sparkling Jello.

Sparkling Jello

 

Sparkling Jello Ingredients:

1 Pack of Jello Water
Club Soda

 

To make the directions REALLY easy. All you do is follow the directions on the package and for the step in which you add 1 Cup or 2 Cups ofย cold water,ย you substitute cold club soda. You should be refrigerating the jello for 15 minutes between when you add the hot water and when you add the cold water. Some packages say you should and some don’t. Chilling the boiling water before you had the cold club soda helps preserve the carbonation.

Adding the club soda in really does make it dance a bit on your tongue. It really dresses up the jello and makes it something a little more exciting. Not that jello isn’t amazing already!!

Crunchy Banana Chip Granola

This morning I took a bit of some Banana Granola that my sister and I made on Sunday night and threw it on some Vanilla yogurt and added a few chopped strawberries. I am LOVING this granola.

I can’t take credit for the idea of this granola because it was maggie who came home with the banana chips and idea. I was the recipe behind the operation and really just snapped pics while I told her what to do next. We really just took the recipe for My Crunchy Granola, and put a banana twist on it…Every time I look at that post it makes me think about my near brush with T-swift…and by near I mean my sisters brush with T-swift.

Banana Chip Granola

Ingredients:

5 Cups Old Fashioned Oats 1/2 Cup Sliced Almonds
1/2 Cup Chopped Walnuts 1/2 Cup Chopped Banana Chips
1/3 Cup Pepitas 1/3 Cup Flaxseed Meal
1 1/4 Teaspoons Cinnamon 3/4 Teaspoon Salt
3/4 Cup Agave Nectar 1/2 Cup Extra Virgin Olive Oil

Directions:

1. Preheat the oven to 350 degrees. In a large bowl, combine all of the dry ingredients.

2. In a small bowl, combine the Agave Nectar and the Olive Oil. Then, pour the wet mix into the dry mix and stir until everything is evenly coated.

3. Spread out the granola mix on 2 cookie sheets making a thin layer.

4. Bake for 15 minutes. Take the pan out and flip the granola on the inside to the outside of the pan and visa versa. The outside oats will cook faster than the inside and you do NOT want this to burn. Bake it for an additional 10 minutes while keeping an eye on it.

Once the granola is golden brown throughout, it is finished. Let the pan completely cool before packaging it into anything or else it won’t crisp up nicely. As soon as it is completely cool, you will notice the crunchy texture we all love ๐Ÿ™‚

YUMMY. This recipe makes a TON of granola, so you don’t have to worry about buying any for a while. I actually really prefer the home-made granola over store-bought because it has such a unique flavor. It really trumps anything you can find in the stores.

To You Snacks!

I have something really exciting to announce/share with you this lovely Friday afternoon. A few weeks ago I had been looking for a fun new snack to give a go when I came across To You Snacks. To You Snacks is a trail mix and snack bar company that uses all natural nuts, berries and ingredients to make a healthy snack that’s easily portable. Initially I was excited to just give them a try because as we all know, I LOVE trying new things. BUT, I was even more excited to find out that they were local ๐Ÿ™‚

So, naturally I shot them and email just to find out some more info. WHELP, I finally met with the owners, who are absolutely delightful. They are originally from Mexico and have been making snacks for just about 15 years. They are both avid water skiers and I just found out runners too! Ergo, To You Snack Bars are aimed to fuel the active lifestyle and cater to that high protein, low sugar need.

BUT! That’s not the best part. So, they have a whole bunch of different bars that you can choose from including:

Mango Yogurt

Apricot Coconut

Chocolate Cranberry

Goji Berry

Peanut Butter and Cranberry

Apple Pecan

And a whole bunch more. If for some crazy reason, these don’t catch your eye…you have the option to MAKE YOUR OWN. Yup. Email them and just provide a list of all the different ingredients you want in your bar. They will then shoot you back an email with the nutritional facts for your bar, just to get your approval. If you want more protein, or less carbs or anything else, you can adjust the ingredients. OR, just say okay. They will make the bars and ship them right to you. COOOL. Call it…the Sizzle Bar. I think it has a ring to it…

Anyways, if you couldn’t guess…that’s what my snack was today ๐Ÿ™‚ I had the Whitney McClintock Bar (bet you can’t guess who made it!) which is packed with Berries, Almonds, Mango and Yogurt.

It was delicious. Think trail mix packed into an easy to eat little bar and that’s the flavor. No added sugars. Not crazy sweet. Simple and delicious.
