Puppy Treats and Sparkling Jello

As a part of my baking expedition, I finally pulled out a do it yourself cookie treat kit that I had found at Petsmart on sale for 1 Dollar. It was a must buy. I have been wanting make my own puppy treats for a while and the only ones that I had really made where the pupsicles a few months ago. The dogs really loved them, but they weren’t really appropriate for the middle of Nemo. 

Anyways, I started mixing them up and all that is really in the batter is Whole Wheat Flour, Rolled Oats, Baking soda, Salt, Peanut Meal, Cornmeal and Powdered Eggs. Then you add in water and canola oil. Really simple and really easy to duplicate. I haven’t attempted to duplicate this yet, but you better believe it’s going to happen. And when it does…there will be different flavors 🙂

I cut them into these cute little doggie bones in hopes that people wouldn’t think that I was making them some oatmeal cookies or something. BUT..that didn’t stop Brent from taking a little bite out of them. He said they tasted like Nerd Cookies….which is what we call Bridget’s Gluten Free Cookies. If you couldn’t tell, we haven’t really found an option for Bridget that doesn’t taste all dried out.

They were standing at my feet the whole time I was making them. Bacon and Oreo could definitely tell that I was making something for them.

When that finished up, I started on a little project for the peoples. Sparkling Jello. Initially, I was looking for some club soda to make this and Maggie was cleaning up the house. We called my sister Colleen who was at the grocery store with my dad picking up the groceries for the week, and asked for some club soda and Maggie needed paper towels.

When my dad walked in the door, he asked “Do I even want to know what the dogs did to the carpet?!” Say What?!

In translation from Colleen to my dad, she included…club soda and paper towels and there’s something on the carpet. Allowing for a small freak out the whole drive home for them.

NOPE, just yummy Sparkling Jello.

Sparkling Jello Ingredients:

1 Pack of Jello Water
Club Soda

 

To make the directions REALLY easy. All you do is follow the directions on the package and for the step in which you add 1 Cup or 2 Cups of cold water, you substitute cold club soda. You should be refrigerating the jello for 15 minutes between when you add the hot water and when you add the cold water. Some packages say you should and some don’t. Chilling the boiling water before you had the cold club soda helps preserve the carbonation.

Adding the club soda in really does make it dance a bit on your tongue. It really dresses up the jello and makes it something a little more exciting. Not that jello isn’t amazing already!!

Baked Cranberry Almond Oatmeal

Yesterday I woke up before everyone else. So I took Oreo out for a quick walk, and started to make some breakfast for everyone. I decided to get a bit adventurous and BAKE some oatmeal. I started by putting some oatmeal in a bowl…and just kind of went from there. The result was a low sugar, healthy breakfast bread that everyone just tore into. I ended up making a second loaf because the first one was eaten so quickly.

Cranberry Almond Oatmeal

Ingredients:

2 Cups Oats 1/2 Cup Chopped Almonds
2 Tablespoons Chia Seeds 1 Teaspoon Baking Soda
1 Cup Vanilla Yogurt 12 Teaspoon Vanilla
1 Cup Milk 1/2 Cup Cranberries
2 Tablespoon Honey 1 Egg

Directions:

1. In a bowl, mix the oats, almonds, chia seeds, baking soda and cranberries.

2. Add in the egg, honey, yogurt, milk and honey. Stir until consistent throughout.

3. Bake it at 350 degrees for approximately 40 minutes in a greased bread pan.

When the edges are browned and the center is just cooked, it is finito. I thought it was delicious with some raspberry jam on top but some of my other family members really just enjoyed the flavor of it. It is only slightly sweet and really healthy!

On the side, Maggie made some yummy lattes. She has been working about a week to perfect it and she is pretty darn good at making them now. She had shown me about a week ago and I burnt my hand in two different places. They still haven’t healed all the way.

As a little “Thank you for being an awesome Latte Maker and giving me some” Gift, I bought some cups and saucers. So while munching on the Cranberry Walnut Baked Oatmeal, we sipped on some lattes flavored with Irish Cream. OHH Yeeaaaa. Fantastic way to start off a Sunday.

Sometimes I just like the feeling of having the coffee shop at home. I just find it so comforting to have some unique little pastries, muffins or breads with a nice warm latte. Especially when it’s such a treat.

A Saturday Baking Project

I am STILL, trying to put a dent in my baking supplies, and I honestly can’t believe the amount of food that I have been able to make without buying anything, but butter. I don’t really have tons and tons of sticks of butter laying around, so that was the only thing on the shopping list lately.

This morning, I ended up taking on the project of making some Granola Bars. Surprise, surprise, I made them chocolate chip and dried cranberry granola bars. I don’t know what it is with this combo, but I LOVE it. I’ve always been a bit nervous about making these, simply because I thought there was a lot to it…or that it was complicated. But after making them, they couldnt’ have been easier. I would absolutely say they are easier than making rice crispy treats (I have some trouble with making those).

Chocolate, Cranberry Granola Bars

Ingredients:

1/3 Cup Honey 1 Stick Butter
1/4 Cup Dark Brown Sugar 1/4 Cup Light Brown Sugar
2 1/2 Cups Rolled Oats 1/4 Cup Sliced Almonds
1/4 Cup Chopped Walnuts 1/3 Cup Dried Cranberries
1/3 Cup Chocolate Chips

Directions:

1. In a medium sized sauce pan, on low heat, melt the butter, sugars and honey together. Do not boil the mixture.

2. Stir in the oats, cranberries, almonds, and walnuts. Then take the pan off the heat, and stir in the chocolate chips.

3. Line a smaller baking dish with parchment paper and press the granola mix into the pan. I used a 9 by 11 pan and ended up scrunching it to the end because it would have resulted in really thin bars that wouldn’t stay together well.

4. Lastly, bake the bars for 25 minutes at 350 degrees. You want the top to be golden brown.

Let it COMPLETELY cool before taking it out of the pan and cutting it. While it is hot the bars will not stick together. You can pull the whole parchment paper out and lay it on the counter to slice easily. Use a sharp knife to cut the bars.

I am actually going to bring these bars with me to Naples. Brent and I are celebrating Christmas with his family and I thought it would be fun to bring some treats. I was trying to come up with a good way to bring them without the bars falling apart or sticking to each other and decided to wrap them individually in parchment paper. This way you can actually just throw them in a bag while you are on the run and don’t have to worry about a mess! GENIUS!

I know this isn’t really an original idea, but afterwards, I kind of felt really smart. Haha, no puzzle is to difficult for THIS one to solve! Just don’t give me a rubix cube and completely kill my smarty pants ego.

To You Snacks!

I have something really exciting to announce/share with you this lovely Friday afternoon. A few weeks ago I had been looking for a fun new snack to give a go when I came across To You Snacks. To You Snacks is a trail mix and snack bar company that uses all natural nuts, berries and ingredients to make a healthy snack that’s easily portable. Initially I was excited to just give them a try because as we all know, I LOVE trying new things. BUT, I was even more excited to find out that they were local 🙂

So, naturally I shot them and email just to find out some more info. WHELP, I finally met with the owners, who are absolutely delightful. They are originally from Mexico and have been making snacks for just about 15 years. They are both avid water skiers and I just found out runners too! Ergo, To You Snack Bars are aimed to fuel the active lifestyle and cater to that high protein, low sugar need.

BUT! That’s not the best part. So, they have a whole bunch of different bars that you can choose from including:

Mango Yogurt

Apricot Coconut

Chocolate Cranberry

Goji Berry

Peanut Butter and Cranberry

Apple Pecan

And a whole bunch more. If for some crazy reason, these don’t catch your eye…you have the option to MAKE YOUR OWN. Yup. Email them and just provide a list of all the different ingredients you want in your bar. They will then shoot you back an email with the nutritional facts for your bar, just to get your approval. If you want more protein, or less carbs or anything else, you can adjust the ingredients. OR, just say okay. They will make the bars and ship them right to you. COOOL. Call it…the Sizzle Bar. I think it has a ring to it…

Anyways, if you couldn’t guess…that’s what my snack was today 🙂 I had the Whitney McClintock Bar (bet you can’t guess who made it!) which is packed with Berries, Almonds, Mango and Yogurt.

It was delicious. Think trail mix packed into an easy to eat little bar and that’s the flavor. No added sugars. Not crazy sweet. Simple and delicious.

Slow Cooked Buffalo Chicken Flatbread

This morning, I woke up at 6 to try out the Jillian Michaels Yoga DVD Workout. Today was supposed to be my rest day after the 7 mile run yesterday. Instead, I wanted to give her DVD a try because it was low impact and yoga does great things for healing muscles. I have also heard GREAT things about her DVD workouts and really wanted to give one of them a go.

I actually really liked it! She has a different take on yoga in the sense that she doesn’t focus on the static movements that many others do. I find yoga to be slightly boring, but Jillian incorporates deliberate movements that target just about every muscle in the body. FOr an early morning workout, it’s perfect. All you have to do is roll out of bed and flip on the TV. Not much to it. And she will DEFINITELY make you sweat.

After the workout, I sat down at the computer for some work. whipped up some breakfast and headed out on the road. For breakfast I indulged in a LOVELY Spinach Protein Smoothie. OH GOOD YUM.

 

Ingredients:

1 Frozen Banana 1 Handful of Spinach Leaves
1/2 Cup Frozen Blueberries 1/2 Cup Almond Milk
2 Full Tablespoons Chocolate Protein Powder

It may not look all the pretty, but it was good. I have been dying to give the spinach deal a try just to see how it went and I really enjoyed it! You will definitely be seeing a few more smoothies with spinach leaves in there!

Work was crazy. I just ran around all day. I also had to deal with some shenanigans trying to find the pups a place to stay on saturday night because Brent and I are going camping with some friends. That was a headache. I got a new dishwasher! Fun! But it’s legit been washing the first load for the past two hours…annnnnnd it’s still going. Mer.

For dinner, I delved into that Slow Cooked Buffalo Chicken and made a little flatbread! Oh and did I do good things! LOVE! It had some spice, and some zest and some SIZZLE! Yup, I said it!

 

Ingredients:

1/4 Cup Slow Cooked Buffalo Chicken 1 Tablespoon Jalapenos
1/4 Slice Muenster Cheese, Shredded 1/4 Cup Mozzarella Cheese, Shredded
Buffalo Saice to Taste 1/4 Cup Onion, Sautéed

Directions:

1. Sautee your onions. Place all of your toppings on your flatbread and bake at 375 for 5-10 minutes depending on how crispy you want it. Enjoy!!

 

 

 

 

 

This was actually very low calorie as well! The bread I used was only 60 calories, and with all of the toppings, we are talking about 200 calories! AWESOME. Now, you obviously need more than that to fill the tank, so pair it with a salad, or in my case…Moose Track Ice Cream!

 

I mean really?! What doesn’t complement something spicy better than something sweet?! Hahaha.

Oh well! I’ve got Tina’s Best Body Bootcamp waiting for me in the morning! She’ll definitely zap the ice cream right out of me.

I was supposed to start the program on Monday, but really needed to get a solid 7 miler in. My plan is to use Tina’s Bootcamp as cross training during my half marathon training. It’s only 6 weeks away! That’s actually terrifying to me. I am only at 7 miles and that’s just a bit over half…Tina’s going to help…I hear she does wonders like that.

What’s your favorite DVD workout?? When do you like to turn them on?? In the morning? Or when you just can’t seem to get the motivation to drive to the gym??

I am really only experienced in Insanity. I LOVE insanity. It gives me no excuses to NOT workout. All you have to do is press play! (I may or may not have stole that line from a Shaun T commercial for insanity)
