I don’t know about anyone else, but I woke up this morning a little exhausted from the fourth festivities. I threw together some fourth of July shots with Triple Sec, Whipped Cream Vodka, Apricot preserves and some fresh strawberries and blueberries. Let’s just say they were a hit! Dangerously delicious.
For lunch today, I whipped out the panini maker. When in doubt, a griddle can turn just an ordinary sandwich into something unbelievable. I was aiming for a cheesy, filling sandwich. A panini was exactly what I was looking for.
1/4 Cup Diced Red Onion 1/4 Cup Diced Pickle
1 Can of Tuna in water 1 Slice of Tomato
1 Tablespoon Cheddar Cheese 1 Whole Wheat Bun
1 Tablespoon Light Mayo
1. In a small bowl, mix the red onion, tuna, mayo, and pickles.
2. Put tuna mix on one side of the bun.
3. Top with cheddar cheese and tomato slice.
4. Place sandwich on the griddle and turn this guy into a Panini!
The only reason that I used a bun was because I had a few left over from making Turkey burgers. So when you are making these, definitely use whatever bread you have lying around. There is no reason to go out and specifically get bread for paninis. Try to take what you normally have in the cabinets and turn it into something new every time you get hungry. The options are endless.
Add whatever you like to the tuna. Tuna is one of those things that can morph into whatever will make your taste buds happy. If you like spicy foods, try adding jalapenos to it. Or Red Pepper. If you love garlic, add some garlic powder, diced garlic and some green seasonings to mix it up. Mustard based tuna is always another way to go. Throw some dijon in there. Or maybe some bacon bit?! Get crazy.
