Cucumber Apple Cooler

I have tried cucumber water before, and LOVED it. Its very refreshing and cool tasting. It literally cools your mouth. So with the summer months coming up….Why not something even cooler tasting. The mint and cucumber already have a cooling effect by themselves. The apple was added to sweeten it up a bit. And OLAY! A cucumber apple cooler!

It’s a really really light flavor. Not heavy in your stomach, and PERFECT for a summer day when you are just trying to cool down. Just throw a little umbrella in it and sit by the pool and you have a perfect little snack.

1 Cucumber, Peeled, Chopped, and Seeded.                              5 Ice Cubes

1/4 Cup Water                                                                                   5-6 Mint Leaves, Chopped

7 Frozen Cubes of Unsweetened 100% Apple Juice

1. Cut, peel and seed the cucumber.

(Seeding is not as hard as it sounds. I just used a spoon and skimmed it along the seeded part)

2. Throw all the ingredients into a blender. Water, ice cubes, apple juice cubes. Mint Leaves etc.

Apple Juice Cubes, Mickey Mouse Shaped. Make sure you find unsweetened apple juice because you don’t need the extra sugar. Any from concentrate will work. All that means is that the original apple juice was reduced for storing and then water was re-added to it when it was bottled.

Mint Leaves

3. And Blend until Smooth.

4. Serve with a Mint or Cumcumber Garnish and you are ready to Enjoy!

This was really really refreshing and nutritionally, it is unbelievable. Extremely low calorie and low carb. Very little sugar and absolutely YUMMY!

Let me know what you think. It takes no time to make and is a quick little snack. So why not try it??
